- Mix first six ingredients. In a small saucepan, bring broth and 1/4 cup peach mixture to a boil. Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 15-18 minutes., Meanwhile, sprinkle chicken with salt and pepper. In a skillet, heat oil over medium heat; brown chicken on both sides. Add remaining peach mixture; bring to a boil. Reduce heat; simmer, covered, until a thermometer inserted in chicken reads 165°, 7-9 minutes. Serve with rice.

- For salsa, in a small bowl, combine peaches, avocado, red pepper, onion, basil, lime juice, hot sauce, lime zest, 1/4 teaspoon salt and 1/4 teaspoon pepper., Sprinkle chicken with remaining salt and pepper. Don't rush it, Let it soak in the goodness of yer larder then ye'll have some grub to remember on yer next voyage matey. Plan to start this fine feast the day before. Steps:
- CHICKEN:.
- Put allspice, thyme, coconut, garlic, chiles, scallions, peppercorns, salt, nutmeg, cinnamon, ginger and lime juice in a blender or food processor and grind to a rough paste.
- Put chicken in a baking dish, add seasoning paste and coat chicken well, using a spoon to turn and rub it.
- Cover and marinate, refrigerated, for at least 6 hours, preferably overnight.
- Heat oven to 350 degrees and bring chicken to room temperature. Turn chicken once more in marinade to coat well, then put baking dish in the oven, uncovered. Bake for 40 mins or up 1 hour, until well browned and juices run clear (start checking at 40 mins, you don't want it overcooked and dry and smaller pieces will take less time). Put dish under the broiler for just a minute or so to char chicken slightly. Remove and serve with the peach salsa (and coconut rice, if desired).
- PEACH SALSA:.
- Combine all ingredients and refrigerate until serving time.
- The flavor is best if the salsa is refrigerated for 6 hours or overnight.
PEACH SALSA

- Divide the ingredients (except for the peaches and cilantro) into 3 batches so they will fit into a food processor. For each batch, halve or quarter 4 cloves garlic, 2 onions, 2 jalapenos and 2 bell peppers and throw into a food processor. Add 1 teaspoon each chili powder, salt and pepper. Squeeze in the juice from 4 limes and pulse. Pour the salsa into a very large container and repeat with the remaining 2 batches.
- Cut the peaches into small chunks, add to the salsa and mix. Mix in the cilantro. If your salsa is a little thick, loosen it with some of the syrup from the peaches.
GRILLED JERK CHICKEN WITH PAPAYA SALSA
Steps:
- MAKE MARINADE
- Blend all marinade ingredients in a blender until smooth.
- MARINATE AND GRILL CHICKEN
- Divide the chicken pieces and marinade in 2 sealable plastic bags. Seal the bags, pressing out excess air, then turn bags over several times to distribute marinade. Put bags of chicken in a shallow pan and marinate, chilled, turning once or twice, for 1 day.
- Let chicken stand at room temperature 1 hour before cooking.
- COOK CHICKEN USING CHARCOAL GRILL
- Open the vents on the bottom of the grill and on the lid. Light a large chimney of charcoal briquettes (about 100) and pour them evenly over one side of a bottom rack (you will have a double or triple layer of charcoal).
- When the charcoal turns grayish white and you can hold your hand 5 inches above the rack for 3 to 4 seconds, sear the chicken in batches on a lightly oiled rack over the coals until well browned on all sides, about 3 minutes per batch. Move the chicken as seared to the side of the grill with no coals underneath, then cook, covered with the lid, until cooked through, 25 to 30 minutes more.
- Serve the chicken with the papaya salsa.
- COOK CHICKEN USING GAS GRILL
- Preheat the burners on high, then adjust heat to moderate. Cook chicken until well browned on all sides, 15 to 20 minutes. Adjust the heat to low and cook chicken, covered with lid, until cooked through, about 25 minutes more.
- Serve the chicken with papaya salsa.
- COOK CHICKEN USING AN OVEN
- If you can't grill, you can roast the chicken in two large shallow (1-inch-deep) baking pans in the upper and lower thirds of a 400°F oven, switching the position of the pans halfway through the roasting, 40 to 45 minutes total.

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Rub chicken breast with olive oil and vinegar, then rub brown sugar onto the chicken until you've got a nice glaze coat.
- Grill chicken on the preheated grill until no longer pink in the center and the juices run clear, about 5 minutes per side; be careful not to let the brown sugar stick to the grill. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- While the chicken is cooking, combine peaches, tomato, grapes, onion, lemon juice, and honey in a bowl; mix thoroughly.
- Dice the cooked chicken and serve on top of the salsa.

- Start by making the tostones. Cut a small slit in the skin the length of the plantain being careful not to cut into the fruit. Use a spoon to help you remove the peel. Then cut the plantains into 1 1/2″ slices. Heat a 9″ cast iron pan over medium heat. When the pan is hot, add about 1/4 cup coconut oil along with as many of the plantain slices as you can fit into the pan. Cook for 2-3 minutes per side, or until golden and slightly softened. Remove the plantain slices from the pan and set them aside to cool a bit. Cook any remaining slices, then flatten each cooked plantain slice until it’s about 1/4″-1/2″ thick. Fry the flattened plantain slices for a second time until they’re crispy and browned on each side, 2-3 minutes per side. Add more coconut oil if necessary. Once all the flattened plantain slices have been fried, remove them from the pan, and keep them warm until you finish the recipe. They can also be kept at room temperature while you finish the recipe.
- Thoroughly rinse the rice 3x until the water runs clear. Then place it to a large saucepan and add the rest of the coconut rice ingredients. Bring the rice to a boil, then cover and lower the heat to a simmer. Simmer until all the liquid has absorbed, about 20 minutes.
- While the rice is cooking, preheat the grill over medium heat for the chicken. Toss the chicken breasts with all the Caribbean Jerk Chicken ingredients until well combined. When the grill is a steady temperature of 350ºF-400ºF, place the chicken on and grill about 10-12 minutes per side, or until the chicken is no longer pink in the center.
- While the chicken and rice are cooking, prepare all the ingredients for the Peach Avocado Salsa. Stir the salsa together, and set it aside to let the flavors develop.
