FRENCH BREAD PIZZAS

Steps:
- For the pizza base: Preheat the oven to 375 degrees F.
- Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
- Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
- Pizza Varieties:
- For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
- For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
- While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
- For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
- For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
- For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
- For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.
PIZZA BREAD WITH TRUFFLE OIL AND SALMON

Steps:
- Place the yeast in a bowl with the sugar and one-fourth cup of the water and stir to dissolve. Set aside for several minutes, until the yeast becomes frothy.
- Use a little of the oil to grease a two-quart mixing bowl and a large baking sheet. Add the rest of the oil to the yeast along with the remaining water, the salt and pepper. Stir in one and a half cups of the flour and enough additional to make a very soft dough.
- Transfer the dough to a well-floured work surface and knead about five minutes, kneading in as much additional flour as necessary to keep the dough from sticking. Put the dough in the oiled bowl, turn it, then cover it with a towel and set aside to rise until doubled, about an hour.
- Preheat oven to 500 degrees.
- Shortly before serving time, divide the dough into quarters and roll each on a floured surface into a circle about seven inches in diameter. Transfer the circles to the baking sheet and prick them closely all over with a fork. Place in the lower third of the oven and bake, turning once, until browned, about 15 minutes.
- Brush the pizza breads with the truffle oil, scatter on top strips of smoked salmon and, if using, slivers of truffle, cut into wedges and serve while still warm.

GARLIC BREAD WITH TRUFFLE OIL
I made some Truffle Oil with Peppercorns and Thyme recipe #98894 so what do I do make crusty garlic bread with it! Yummy! A nice side to a dinner or serve as an appetizer.

Steps:
- Preheat oven to 450 degrees F.
- Place In a food processor the oil,softened butter, garlic, cheese and herbs.
- Pulse until well combined.
- Slice the bread into 1-inch thick slices.
- You will need 12 to 16 slices.
- Spread the butter mixture onto 1 side of each bread slice.
- Arrange slices, butter side up and bake in the oven until lightly toasted, about 5 to 8 minutes.
- Top each with a slice of truffles.
- Enjoy!
WILD MUSHROOM PIZZA WITH TRUFFLE OIL
This recipe is from Cooking Light, and I waited a while to try it because of the expense of the truffle oil.....wish I hadn't. This is delicious. Don't forget the sea salt or flake salt at the end. Since making this, I've tried this on Naan bread to save time instead of making the pizza dough. It's better on the pizza dough, but still delicious on the Naan bread. Prep time includes rising time for the dough.

- Pizza Crust:.
- Dissolve sugar and yeast in warm water in a large bowl; let it stand 5 minutes. Weigh or spoon 5.6 oz flour into dry measuring cups; level with a knife. (1 1/4 cups).
- Add the flour and 1/4 tsp salt to the yeast mixture; stir until a soft dough forms. Turn the dough out onto a lightly floured surface.
- Knead until smooth and elastic (about 10 minutes); add enough of the remaining flour, 1 tbsp at a time, to prevent the dough from sticking to your hands. (Dough will feel tacky).
- Place the dough in a large bowl coated with cooking spray, turning to coat the top. Cover the surface of the dough with plastic wrap lightly coated with cooking spray; let rise in a warm place (85°), free from drafts, 30 minutes or until doubled in size. (Gently press two fingers into the dough. If the indentation remains, the dough has risen enough.
- Punch the dough down; cover and let it stand 5 minutes.
- Line a baking sheet with parchment paper; sprinkle with cornmeal. Roll the dough into a 12 inch circle on a floured surface. Then place the dough on the prepared baking sheet. Crimp the edges of the dough with your fingers to form a rim; let rise for 10 minutes.
- Preheat the oven to 475°.
- Mushroom Topping:.
- While the dough rises, heat a large nonstick skillet over medium heat. Add olive oil to the pan and swirl to coat. Add the mushrooms and remaining 1/4 tsp salt; cook 7 minutes or until the mushrooms soften and moisture almost evaporates, stirring frequently.
- Sprinkle 1/4 cup fontina evenly over the dough. Arrange the mushroom mixture evenly over the fontina.
- SPrinkle with thyme; drizzle evenly with the truffle oil. Sprinkle remaining fontina and Parmesan cheese evenly over the top.
- Bake at 475° for 15 minutes or until the crust is lightly browned. Slide the pizza onto a cutting board; sprinkle with sea salt. Cut into 8 slices and serve immediately.

- Preheat oven to 350 degrees.
- Add small amount of Rosemary to each Flat bread and lightly coat with Olive Oil.
- Cover with cheese leaving about a half inch from the edge of the Flat bread.
- Lightly drizzle with Truffle Oil and place in the oven for 10-15 minutes or until all cheese has melted.
- For a little twist add some prosciutto or your other favorite before cooking.
