PASTA SKILLET WITH KIELBASA
Inspired by several recipes here, I created this pasta skillet with what I had on hand, and everyone loved it! Nice change from regular pasta and meat, have to try it with fresh tomatoes when they are ready from the garden!

Steps:
- Bring a large pot of lightly salted water to a boil for pasta.
- Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
- Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
- Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

GOULASH (POLISH)
Got this one from a friend and it is good. I have served it over boiled potatoes and pasta. but by fare the best is on potato pancakes. I suggest taking the time to make the potato pancakes its not that hard and it really makes this recipe go off the deep end which I am a big fan of doing.

- So I usually cut up the stew meat into about 3/4 inch cubes but if you prefer them larger or smaller that is up to you.
- In a bowl combine 1/4 cup flour some salt and pepper. you don't need much maybe a 1/8 teaspoon of each.
- Add stew meat to flour mixture and toss to coat meat.
- In a Dutch oven or heavy pot bring warm olive oil over medium high heat.
- Add stew meat and brown stirring to keep meat from burning. when meat is brown remove from pot.
- Reduce heat to medium and add red peppers and onion cook until soft about 5 minutes you may have to add son extra olive out.
- Add crushed garlic and cook for another 2 minutes until you can smell garlic.
- Add beef stock, tomato paste, and spices whisking together to combine. When this comes to a low simmer add browned meat and let simmer until sauce thickens to your liking.
- Remove from heat and serve.

- Heat 1 tablespoon of oil in a large deep skillet. Once the oil is hot, add in the smoked sausage medallions, and brown them for a few minutes until they become a deep brown color. Remove the sausage from the pan and set aside.
- To the same pan add in the butter, and allow it to melt; add in the onions, and caramelize those in the butter and sausage drippings, about 5-7 minutes. Now add in the garlic, a couple of pinches of salt, the freshly cracked black pepper and the paprika, and stir to combine with the onions. Saute for two more minutes.
- Next, add in the sliced potatoes, chicken stock and parsley, and stir to combine. Cover the pan with a lid that and simmer on medium-low heat for about 15 minutes. Then, uncover and allow the potatoes to continue to simmer for 10 more minutes, or until they are tender and the sauce a bit thickened, stirring once or twice during that time.
- Finally add the smoked sausage back into the pan, and add a couple more pinches of salt and pepper, if necessary. Serve hot
