This is an old recipe from my grandmother. 'Good Polish-Slovak food!' She would always say. 'Eat more!'

Steps:
- Heat oil in a large skillet over medium-high heat. Cook onions and potatoes for 15 minutes, stirring occasionally. Reduce flame to med and stir in bell pepper, onion powder, garlic powder, salt and pepper. Cover, and cook 5 minutes. Stir in kielbasa, cover, and cook for 15 minutes, or until onions are caramelized.

- In a nonstick skillet, brown sausage over medium heat; set aside. For white sauce, melt butter in a saucepan. Stir in flour and seasonings until smooth. Gradually add milk. bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat., In a 3-qt. baking dish coated with cooking spray, layer a third of the potatoes, cabbage, onion, sausage and white sauce. Repeat layers twice. , Cover and bake at 350° for 1 to 1-1/2 hours or until the vegetables are tender.

- In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned. Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut and pepper. Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

Steps:
- Preheat oven to 400 degrees.
- Grease a baking dish with nonstick cooking spray and place sliced potatoes in bottom.
- Saute chopped onions in butter.
- Pour over potatoes.
- Beat together eggs, sour cream, and milk.
- Mix in salt and pepper.
- Pour sour cream mixture over top of potatoes.
- In small mixing bowl, mix together bread crumbs and grated Parmesan cheese.
- Sprinkle mixture over top of potatoes.
- Bake 20 minutes or until top is browned.

Official Contest Entry: Simply Potatoes 5Fix. This recipe was given to me by my Polish in-laws and has become a staple in our house. The ingredients are easy to have on hand (thanks to Simply Potatoes), it is easy and quick to make, and the entire family loves it. The kids scarf it down and my husband fights them off in hopes of having leftovers for lunch the next day. I love it because it is a one dish meal and clean up is a breeze. Adjust dressing and cheese to taste--we like ours "dripping"!

Steps:
- Heat 1/4 cup Italian dressing in skillet. Cook bag of Simply Potatoes according to package directions with dressing as substitute for oil, approximately 15 minutes.
- Slice sausage and add to potatoes. Cook on high heat until both are browned.
- Add 1/2 cup Italian dressing (more or less to preference) and cook 2-3 more minutes.
- Sprinkle shredded cheddar over top and allow to melt.
- Serve and enjoy!
