POMODORO AND BASILICO SAUCE WITH GNOCCHI

This is a great pasta dish with a unique noodle - the Italian Potato Gnocchi. My family loves it and I make it a lot! It is really fast and easy to make.

Pomodoro and Basilico Sauce With Gnocchi image

Steps:

  • Heat olive oil in a saucepan and cook the onion, garlic, and mushrooms until soft.
  • Add the diced tomatoes and cook for 5 minutes.
  • Add the basil, salt and pepper.
  • Cook the Gnocchi as directed on package. Drain well. Toss the Gnocchi with the sauce and sprinkle with the parmesan cheese and Mozzarella cheese.
  • Put under the broiler to melt the cheese. Enjoy!

1 garlic clove, minced

2 tablespoons olive oil
15 basil leaves, finely shredded or 2 teaspoons dried basil
16 ounces plum tomatoes, diced

1/2 cup shredded mozzarella cheese
16 ounces gnocchi (Italian potato noodles)

Tomato and Basil Sauce - Salsa Di Pomodoro E Basilico image

Steps:

  • If using fresh tomatoes, core them, cut them into coarse chunks, and puree them in a food processor, blender, or food mill until smooth. Strain the flesh of canned tomatoes through a fine sieve, to remove skins and seeds. Set aside.
  • Heat the olive oil in a large pot, and cook the onion over a medium heat, stirring, until soft.
  • Add the garlic and cook, stirring occasionally, until it becomes soft. Do not let the garlic brown, or an acid taste will be imparted in the sauce.
  • Add the remaining ingredients, reduce the heat to low, and simmer until thickened, about 15 minutes.

5 lbs ripe plum tomatoes or 3 (28 ounce) cans crushed plum tomatoes, with their liquid
1/2 cup colavita extra virgin olive oil
2/3 cup onion, diced
3 garlic cloves, minced
1 1/2 cups dry red wine

fresh ground black pepper, to taste

Steps:

  • Chop, sauté and place in bottom of serving pan, place meatballs on top. Keep warm.

Tablespoon olive oil
1 small yellow onion chopped and sautéed
1 20 ounce can of fresh canned crush tomatoes with sauce
2 teaspoons fresh basil, parsley, thyme & grated parmesan
5 garlic cloves, sautéed
1 1/4 teaspoon salt
1 teaspoon sugar
1/2 teaspoon fresh pepper
pinch of red pepper flakes

  • Gently sweat the onions and garlic in the olive oil in a large pan, on low to medium heat, stirring constantly until the onion is soft and translucent. Be sure to not let the garlic burn.
  • Slightly crush or bruise the basil leaves and drop in to fry for a few minutes. They should go a vibrant green.
  • Add the tomatoes, with the sugar and salt (sugar is less important if using fresh tomatoes), and then increase the heat to medium-high. Watch out for spitting tomatoes! If they spit, it's probably too hot anyway.
  • Cook with a medium boil for around 20 minutes, stirring frequently. Taste it as you go, and simply take it off when you're happy with the complexity of flavour. A longer and darker sauce is better suited to tinned tomatoes, while a quicker and lighter sauce will make the most of fresh produce.
