OYSTER POOR BOY
Steps:
- Combine the buttermilk and 2 teaspoons of hot sauce in a small bowl. Add the oysters and refrigerate for 30 minutes to an hour.
- While the oysters are soaking, whisk the mayonnaise, lemon juice, mustard, the remaining tablespoon of hot sauce, pickle brine, 1/2 teaspoon of kosher salt, parsley, black pepper, cayenne, garlic powder and sumac together in a medium mixing bowl. Add the iceberg lettuce and toss to coat. Cover and refrigerate for 30 minutes.
- Heat the peanut oil in a 5-quart Dutch oven over high heat until it reaches 350 degrees F on a deep-fry thermometer. Then lower the heat to slowly bring the oil up to 375 degrees F.
- Meanwhile, combine the cornmeal, panko, the remaining 1 1/2 teaspoons of salt and nutmeg in a medium bowl.
- Remove each oyster from the marinade and shake off the excess moisture. Dredge in the cornmeal mixture, then move to a cooling rack set over a half-sheet pan. Allow the oysters to sit for several minutes afterwards to allow the breading to set.
- Transfer 6 oysters at a time to the hot oil and fry until golden brown, 1 1/2 to 2 minutes. (Watch your thermometer because the introduction of cold food will likely pull the temperature down a bit.)
- Carefully transport the fried oysters to a clean cooling rack. Sprinkle with freshly ground black pepper. Bring the oil back to 370 to 375 degrees F and repeat with the remaining oysters.
- Split the rolls in half lengthwise. Tear out a bit of bread from the center of each roll, creating a trough. (If you wish, lightly toast the rolls in a 375 degrees F oven for 3 minutes.)
- Line the bottom of your roll with slaw and top with 5 to 6 oysters.
- Consume. Notice how the slaw is kinda gooshy (in a good way) and how that contrasts with the crunch of the oysters. Pulling some of the bread out of the middle will help the sandwich stay together, but you're still going to need a roll of paper towels to eat this thing.
POOR MAN'S LOBSTER (HADDOCK) W/ MELTED BUTTER
I grew up Catholic, so haddock on Fridays during lent was a tradition. This was one of my favorite ways of having it, and it is so easy. Lobster tail is my favorite food, and although this is not as fantabulous as lobster tail, it will give you that fix when you need it for a lot less $$$! It is so good!

- 1. So easy. Mix beer with Old Bay, vinegar, & some salt & pepper in Dutch Oven or other large saucepan. Place haddock over top. Pour about a beer can full of water over top of haddock -- just enough to cover.
- 2. Turn heat to boil & boil covered for 20 minutes over med heat.
- 3. Remove haddock with large spatula & place on serving plate. Squeeze lemon juice over top. Serve with melted cups of butter. (Don't be alarmed if the haddock doesn't look beautiful when you take it out. Inside it's all nice & white & flaky).
- 4. Just as I do w/ lobster tail, I like to flake the haddock pieces & then let them sit in my melted butter for a minute as I eat. Enjoy!
POOR MAN'S MOCK LOBSTER
Try this recipe for chicken that is marinated and grilled, dipped in butter and tastes amazingly like lobster. My Dad actually got this recipe from a friend of his, and it's too wonderful to keep it a secret! Serve with clarified butter for dipping.

- In a saucepan, combine the soy sauce, oil, garlic salt, pepper, brown sugar, mustard powder, ginger and pineapple juice. Bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, then remove from the heat and allow to cool completely. When cooled, place the chicken into a large resealable bag and pour the marinade over it. Press out as much air as you can, seal and refrigerate for at least 2 hours to marinate.
- Preheat a grill for medium-low heat. When hot, lightly oil the grate.
- Place the chicken on the grill and discard the marinade. Cook until chicken juices run clear, 20 to 25 minutes. Turn as needed to keep the chicken from burning.

POOR MAN'S LOBSTER

- Add the sugar and salt to a large pot of water and bring to a boil. Cut the halibut into large bite size pieces. Add the chunks of halibut to the boiling water and cook until the fish floats to the top. With a slotted spoon, transfer the halibut to a serving bowl. Keep warm while cooking the rest of the halibut. Serve with melted butter in individual condiment dishes, and when you dip the fish chunks into the melted butter, it tastes almost like lobster. It is quick and easy and kids love it.

- Fill a pot with water (about a gallon).
- Add 1 cup sugar, and bring to a boil.
- Do not ever stir the mixture.
- Add chunks of halibut, do not over crowd.
- They will sink to the bottom, and then rise to the top when they are done.
- It should take just a few minutes.
- Remove with slotted spoon.
- Remember to not stir the mixture.
- Continue until all the halibut is cooked.
- Dip in melted butter and eat!
