BARBEQUE PORK FAJITAS

- Combine pork strips, cumin, and garlic pepper blend in a large resealable plastic bag. Shake until pork is coated.
- Heat vegetable oil in a large skillet over medium heat. Add pork; cook and stir until browned, 4 to 5 minutes. Add onion, red bell pepper, and green bell pepper; cook until fragrant, about 2 minutes. Stir in barbeque sauce; simmer until flavors combine, about 2 minutes.
- Serve pork mixture over flour tortillas.

- Mix lime juice, cumin, salt and garlic in shallow glass or plastic dish. Stir in pork. Cover and refrigerate, stirring occasionally, at least 15 minutes but no longer than 24 hours.
- Remove pork from marinade; reserve marinade. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 3 minutes, stirring once. Stir in onion, bell peppers and marinade. Cook 5 to 8 minutes, stirring occasionally, until onion and peppers are crisp-tender.
- Place one-fourth of the pork mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over pork mixture; fold right and left sides over folded end, overlapping. Fold remaining end down.

- Place roast in a 5-qt. slow cooker. Combine the water, bouillon, garlic and seasonings; pour over roast. Top with onions. Cover and cook on high for 1 hour. Reduce heat to low. Cook for 7-8 hours or until pork is very tender., Remove meat; shred with two forks. Return to slow cooker; heat through. - Cut pork into 4x1/2x1/4-in. strips; set aside. In a bowl or resealable plastic bag, combine orange juice, vinegar, garlic, oregano, cumin, seasoned salt and hot pepper sauce; mix well. - Slice pork into strips and place them in a one quart zip-top bag. Add lime juice, 1 Tbsp olive oil, and spices to the bag, squish around to coat, then let it sit to marinate. (I was in a hurry, so just quick marinated mine while slicing the veggies -- but you can let yours go longer in the fridge for more flavor if you like, turning occasionally.)
- After pork marinates: Heat 1 Tbsp of olive oil in a 12" cast iron skillet on medium-high heat for about a minute. Swirl to coat the bottom of the pan, then add the pork and cook for just one minute, stirring constantly.
