PORK CHOPS WITH BLUE CHEESE GRAVY
BOY, does this look good.... if you like blue cheese. I highly recommend a moist blue cheese as opposed to a more crumbly one to facilitate making the sauce. Nabbed with no shame whatsoever from allrecipes.com.

- Melt butter in a large skillet, over medium heat. Season the pork chops with black pepper and garlic powder. Fry the chops in butter until no longer pink and the juices run clear, about 20 to 25 minutes. Turn occasionally to brown evenly.
- Remove chops to a plate and keep warm. Stir the whipping cream into the skillet, loosening any bits of meat stuck to the bottom. Stir in blue cheese. Cook, stirring constantly until sauce thickens, about 5 minutes. Pour sauce over warm pork chops.

- Preheat broiler. Sprinkle pork chops on both sides with pepper; place on a broiler pan coated with cooking spray. Broil 4-5 in. from heat 4-5 minutes on each side or until a thermometer reads 145°. - In a shallow bowl, whisk egg and milk. In another shallow bowl, combine the bread crumbs, 1 teaspoon parsley and thyme. Sprinkle pork chops with 1/2 teaspoon salt and 1/2 teaspoon pepper. Dip chops in egg mixture, then crumb mixture., In a large cast-iron or other ovenproof skillet over medium-high heat, cook pork chops in oil for 4 minutes on each side. - Melt the butter in a large skillet over medium heat. Season the pork chops with seasoned salt and seasoned pepper, then dredge in 3 tablespoons of flour. Shake off any excess flour, and place the chops in the skillet. Cook for a few minutes on each side, until browned.

PORK CHOPS W/ BLUE CHEES APPLEJACK GRAVY
Steps:
- Cook bacon until crisp, remove and drain. Keep drippings in skillet. Add onions and saute 15 minutes. Push to one side, add apples and sugar and saute apples about 20 minutes. Transfer mixture to bowl. Heat 1T bacon drippings or oil in same pan. Add four ad stir 1 min. Whisk in juice, brth, and applejack. Boil until gravey thickens, 4 minutes. Add cheese and whisk until melted. Add onions and apples stir until warm and remove from het. Salt & pepper pork. COok over medium/high heat 6 min per side (strzempko women don't tell your men how long you cooked it). Pour apple/onion gravey over pork chops and serve.
