Pork Chops with Citrus-Cucumber Salsa image

Steps:

  • Section fruit over medium bowl. (See tip.) Set fruit sections aside. Squeeze juice from membranes into blender. Add dressing, 1/2 cup cilantro and sugar; blend well.
  • Chop fruit and remaining cilantro; place in medium bowl. Add cucumbers, onions, chiles and 2 Tbsp. of the dressing mixture; mix lightly.
  • Cook 3 chops in large skillet on high heat 1 min. on each side or until evenly browned on both sides. Remove from skillet. Repeat with remaining chops. Return all chops to skillet. Add remaining dressing mixture; cook on medium-low heat 8 min. or until chops are done (145ºF). Remove from heat. Let stand 3 min. before serving with the fruit salsa.

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In shallow dish, mix cereal, 1 tablespoon cilantro, 1 teaspoon garlic, the orange peel, onion powder, oregano, cumin and pepper. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.
  • Bake 25 to 30 minutes or until pork is no longer pink in center.
  • Meanwhile, in 1-quart saucepan, heat oil over medium heat. Cook 1 tablespoon garlic in oil about 1 minute, stirring occasionally, until golden. Stir in lime and orange juices. Heat to boiling, stirring occasionally. Remove from heat; stir in 2 tablespoons cilantro. Cover; refrigerate until serving time. Serve with pork chops.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Tear off a generous square of tin foil for each chop, enough to wrap and seal completely. Coat both sides of each chop with lemon pepper.
  • Put 1 tablespoon butter and 1 tablespoon olive oil in the middle of each square of tin foil. Put the peppered chops on top of the butter and oil.   • Season pork chops with salt and pepper.
  • In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add pork chops; cook 4 to 5 minutes on each side or until golden brown on both sides. Transfer to plate.

Skillet Pork Chops with Salsa Verde image

Steps:

  • For the pork chops: Preheat the oven to 425 degrees F.
  • Combine the paprika, salt, sugar and pepper in a small bowl. Rub all over the surface of the chops and let the chops rest on a rack while you make the salsa verde.
  • For the salsa verde: Combine the parsley, capers, lemon juice, zest, mustard, salt, cayenne, scallions and garlic in a blender. Pulse to make a coarse paste. With the blender running on high, add the olive oil in a slow, steady stream to make a thick, smooth sauce. With the blender running on low, add up to 2 tablespoons water to thin the sauce so it has a drizzle consistency.
  • For the pork chops: Heat a skillet over medium-high heat, then coat with some olive oil. Add the chops to the skillet and sear until the underside is well browned, about 4 minutes. If the sides of the chops have a thick layer of fat, turn them briefly on their sides to sear the fat, about 30 seconds. Flip the chops raw-side down and transfer the skillet to the oven. Roast until the chops are just cooked through and reach 140 to 145 degrees F in the center as measured on an instant-read thermometer, about 10 minutes. Remove from the oven and let rest for 5 minutes. Serve drizzled with the salsa verde.

  • In a large, nonreactive bowl, combine all ingredients except the 1 teaspoon olive oil, pork chops, and butter; mix well. Add chops, and spoon marinade over them to coat. Marinate for at least 30 minutes.
