- In a large nonstick skillet, brown pork in oil for 3-4 minutes on each side. Remove and set aside. , In the same skillet, saute the onion, garlic and sugar until onion is caramelized and tender. Stir in the apple juice, cranberry juice, cranberries, mustard and rosemary. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until sauce is reduced by half., Return pork to pan; heat through. Sprinkle with additional cranberries and rosemary if desired.

- Sprinkle pork with salt and pepper. In a large nonstick skillet coated with cooking spray, cook pork in batches over medium heat for 3-5 minutes on each side or until juices run clear. - Preheat broiler. In a small bowl, mix cornstarch, broth and apple juice. In a nonstick skillet, heat butter over medium-high heat. Add apples, green onions and garlic; cook and stir 2-3 minutes or until apples are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Keep warm., Mix thyme, paprika, salt and pepper. Pound pork slices with a meat mallet to 1/2-in. thickness; sprinkle both sides with seasonings., Place pork on a broiler pan. Broil 3 in. from heat 3-4 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with apples.

PORK MEDALLIONS WITH CRANBERRIES AND APPLES
This is very good on a crisp fall night and goes together quickly. Leftovers are good reheated. I got this from a magazine and my husband who isn't a big pork lover really liked it too!

Steps:
- Combine first 7 ingredients in a small bowl and stir well.
- Cut pork crosswise into 8 pieces.
- Flatten each piece to 3/4-inch thick using a meat mallet or rolling pin.
- Coat each piece with flour, shaking off excess.
- Heat 3 teaspoons olive oil in a large non-stick skillet coated with cooking spray over medium-high heat.
- Add pork and saute 2 1/2 minutes on each side or until browned.
- Remove from pan.
- Add 1 teaspoon oil to pan.
- Add onion, cover, reduce heat, and cook 5 minutes or until golden brown, stirring frequently.
- Return pork to pan; add juice mixture, apple and cranberries.
- Bring to a simmer, cover and cook 3 minutes or until cranberries pop and pork is cooked through, stirring occasionally.
- Garnich with sage sprigs.

- (Don't overcook) Remove from pan and set aside.

Pork Tenderloin is a favorite of ours-this is an excellent fall dinner when apples are crisp and juicy. They really play off the sweetness of the pork and the creamy cheese.

Steps:
- Cut tenderloins into 12 equal pieces and pound between plastic or waxed paper until 1/4 inch thick.
- Melt 1&1/2 T.
- butter in a large skillet over medium high heat.
- Cook pork for 2 minutes per side.
- Remove from pan.
- Reserve juices.
- Top each piece of pork with a slice of cheese and place in a warm oven to JUST melt the cheese.
- Melt the remaining butter and add the apple slices and sugar to the pan.
- Cook and stir for 3 minutes.
- Remove from pan.
- Add cider, poultry seasoning and any juices from the pork to the skillet.
- Cook and stir over high heat until the liquid is reduced to half.
- Pour in cream.
- Stir to thicken slightly.
- Add salt and pepper to taste.
- Place apples on a serving plate-top with cheese covered pork and pour the cream mixture on top.
- Serve.

Steps:
- Season pork roast with salt and pepper.
- Brown on all sides in a skillet.
- Meanwhile, put a layer of apples on the bottom of the crock pot.
- When the meat is browned, throw it on top of the apples.
- Throw in the rest of the apples, the onion, and the cranberries around and on top of the pork.
- Mix the apple cider, the chicken broth, the brown sugar and the sage.
- Pour over the pork and fruits.
- Cover and cook on high for 6-7 hours until the pork falls apart when you poke it with a fork.
- Shred the pork and mix well with the sauce.
- Season to taste with salt and pepper.
- Serve over hot buttered noodles.
