Steps:

  • Prepare a smoker for cooking between 250 and 275 degrees F. Trim the excess fat from the spareribs and cut out any sharp or cracked bones. Remove or score any silver skin.
  • Liberally rub the ribs with Sawdust Rub, shaking off the excess. Place the ribs in the smoker and cook, spritzing with apple juice every 30 minutes, until the fat starts to render from the surface of the ribs, about 3 hours.
  • Spritz a piece of heavy-duty foil with some apple juice and drizzle with about 3 tablespoons Original BBQ Sauce. Arrange the ribs on the foil, meaty-side down, and fold the foil on the ribs so that steam can escape but the juices are trapped inside. (If you multiply this recipe to do multiple racks, make sure each rack gets its own foil packet.) Put back in the smoker meaty-side down. Smoke until the meat pulls back from the bones by about 3/8 inch, another 1 to 1 1/2 hours. Let rest for 30 minutes, then slice into ribs.
  • Mix together the salt, pepper, brown sugar, paprika, chili powder, granulated garlic, granulated onion and cayenne in a bowl and break up any clumps by hand.
  • Combine the ketchup, vinegar, Worcestershire, molasses, brown sugar, hot sauce and lemon juice together in a large pot and whisk until blended. Place over medium heat and bring to a simmer, then add the chili powder, granulated garlic, onion powder, salt, pepper and cayenne. Continue to simmer 30 to 45 minutes, stirring occasionally to keep from burning.

3/4 cup coarse black pepper
2/3 cup brown sugar
1/2 cup paprika
1/4 cup chili powder

6 cups ketchup
1 cup apple cider vinegar
1 cup Worcestershire sauce
3/4 cup molasses
1/2 cup brown sugar
2 tablespoons hot sauce, such as Louisiana
2 tablespoons lemon juice
1/2 cup chili powder
2 tablespoons granulated garlic
2 tablespoons onion powder
2 tablespoons kosher salt
2 tablespoons black pepper
1 tablespoon cayenne pepper

  • Cut roast in half; transfer to a 5-qt. slow cooker. In a small bowl, combine the broth, red pepper, onion, vinegar, Worcestershire sauce, brown sugar and seasonings; pour over pork. Cover and cook on low for 3-4 hours or until meat is tender., Remove pork; cut some into cubes measuring 2-1/2 cups and save for another use. (Keep remaining pork warm.) , For gravy, strain cooking juices and skim fat; pour 1 cup into a small saucepan. Combine cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. , Meanwhile, in a small microwave-safe bowl, cook potatoes on high for 2-3 minutes or until heated through. Let meat stand for 10 minutes before slicing; serve with potatoes and gravy.

Sauerkraut and Ribs image

Steps:

  • 1. Place ribs in a large pan, add enough water to cover ribs and season with pepper. Cover pan and bring to a boil, turn heat down and simmer until ribs are just tender (fork inserts easily but won't come out without resistance). Add sauerkraut and grated apple, add more water if needed. Cover and bring back to a boil, turn heat down and simmer until ribs are tender and starting to fall apart. Now they are done and ready to serve.
  • 2. VARIATION: Sliced onion can be added to the pot when the sauerkraut is added. Instead of serving mashed potatoes with this meal the potatoes can be cut up in large chunks and added to the pot about 1/2 hr or so before meat is done.

Steps:

  • Melt butter in large skillet over medium heat. Add water and minced garlic; stir for 1 minute. Add mushrooms, cover, and cook, stirring occasionally, until mushrooms are tender, about 5 minutes.   • Preheat oven to 325 degrees F (165 degrees C).
  • In a saucepan over medium heat, stir together the vinegar, ketchup, soy sauce, and pineapple. Stir in brown sugar, cornstarch, salt, and ginger. Cook, stirring constantly, until slightly thickened, about 5 minutes.

  • Pat the ribs dry, then season with the Old Bay Seasoning, and then salt and pepper to taste. Heat 2 tablespoons of the oil in a Dutch oven. Brown the ribs, cooking in batches, until all sides are browned. Remove all of the ribs to a plate.
  • Add the remaining tablespoon of oil to the pan. Add the carrot, celery and onions and cook until softened, 3-4 minutes. Add the garlic and cook another minute. Add the tomato paste and cook, stirring to cook out the raw flavor, a few more minutes. Stir in the apple cider vinegar to deglaze the pan, then add the bay leaves and red pepper flakes.
