PORTOBELLO PESTO PIZZA
I found this on a blog called "A Dash of Sugar and Spice" and I'm posting for safe keeping. I think I'll make it some weekend my husband is at camp because he doesn't eat mushrooms! It's a good vegetarian dish that could easily go carnivore with the addition of chicken.

- For the tomato bruschetta, combine the chopped tomatoes, onion, garlic, olive oil, salt, and oregano in a mixing bowl and toss well. You can make this in advance and keep in the fridge for a few hours.
- Preheat the oven to 425 degrees F. (or follow the instructions on your pre-made pizza shells). You can make this recipe with fresh pizza dough, but I find it easier and faster, and just as tasty, to use store-bought shells from the bakery.
- Sprinkle with cheese. You can use as little or as much cheese as you want. I usually use very little as a base.
