GARLIC ROASTED TOMATO SPREAD

These slow-roasted tomatoes make a tasty addition to any sandwich, or a simple appetizer when spread on crostini.

Garlic Roasted Tomato Spread image

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Arrange tomatoes, cut side up, in a shallow baking dish; drizzle with olive oil and sprinkle garlic, oregano, sugar, and salt evenly atop.
  • Bake in the preheated oven for 1 hour. Turn tomatoes over and roast until caramelized and very soft, 1 to 1 1/2 hours. Remove from oven and set aside to cool to room temperature, about 1 hour.
  • Transfer tomato mixture to a blender or food processor; puree until smooth.

Portuguese Grilled Tomato Spread image

Steps:

  • Lightly coat the tomatoes with some of the olive oil and place on the grill over medium fire.
  • Grill, turning frequently , until the skin starts to blister and blacken. When the skin is splitting and blistered, remove from the heat.
  • Set aside until cool enough to handle and peel off the skins and stems.
  • Transfer the tomatoes to cutting board and coarsely chop. Transfer to a bowl, season with the garlic, salt, pepper and a splash of vinegar.
  • Serve as a side dish or spoon over toasted bread slices.

Sardinhas Assadas / Portuguese Grilled Sardines image

Steps:

  • Rinse the sardines and remove the scales, then sprinkle liberally with the sea salt and leave for at least 1 hour.
  • Preheat your grill, broiler or barbecue so that it's nice and hot.
  • Rinse the sardines under some water and then dry them with papertowels.
  • Brush the sardines with a little olive oil and then grill for several minutes each side until they are cooked.
  • Serve immediately with a dash of olive oil drizzled over the tops, and sea salt sprinkled over them.

  • Heat oil in a large sauté pan over medium-high heat. Add garlic and crushed red pepper flakes and sauté for 1 minute, stirring occasionally.
  • Add in the tomatoes and stir to combine with the garlic. Cover the pan and continue to cook, stopping to stir the mixture occasionally, until all of the tomatoes have burst and released their juices to form a sauce, about 6-8 minutes. Continue to simmer the mixture uncovered for an additional 3-4 minutes, or until it reaches your desired consistency. (Note that the spread will thicken a bit as it cools.)
  • Reduce heat to low. Add in the balsamic, plus any sweetener and/or herbs (if using), and stir until combined. Taste and season with salt and pepper, as needed.

  • Purée the tomatoes in a food processor, working in batches if necessary. Pass the pulp through a sieve, pressing with the rounded side of a ladle or spoon to extract as much juice as possible. Measure out 1 quart (4 cups) juice.
  • In a large pot, heat the sugar and water, dissolving the sugar to make a syrup, and bring the syrup to a boil. Boil to string stage (240°F/115°C on a jelly thermometer). This could take as long as 30 minutes. You can test this by using a spoon to drop a little syrup in ice water. Dip your fingers in the ice water and take a small bit of syrup off the spoon. Quickly press it between your index finger and thumb, then pull them apart. If a thread or string of sugar forms, the sugar is ready.
  • When the sugar reaches 240°F (115°C), take the pot off the heat, pour in the tomato juice and lemon juice, and quickly stir to dissolve the sugar lumps that form. Return the pot to the stove and keep stirring with the pot over high heat, until it reaches jell stage (220°F/105°C), 20 to 25 minutes. Pay careful attention because the jelly will rise up in the pot and will need constant stirring with a wooden spoon to reduce the volume. As it cooks, the syrup progresses from a pale peachy color to a russet red. As time passes the color darkens more rapidly, turning this russet red just at jell point. Nearing this crucial point, you will also begin to hear the snap and crackle of air bubbles breaking at the surface and popping against the thick syrup. This means you’re almost there. If you wish to test the jell point, pull the pot off the heat and spoon a little jelly onto a plate to see if it sets up in a minute or two. The jelly has a very soft, loose consistency and will not end up compl
