"I used to work with a cook who considered this sandwich one of his specialties," says Denise Hollebeke of Penhold, Alberta. "Once I tried it, I could see why. It's a great change from a traditional tuna sandwich."

Crunchy Tuna Turnovers image

Steps:

  • In a small bowl, combine tuna, cheese, mayonnaise, olives and lemon-pepper; set aside. On a lightly floured surface, flatten each biscuit into a 5-in. circle. Spoon 2 rounded tablespoonfuls of tuna mixture onto one side of each circle. Fold dough over filling; press edges with a fork to seal., Place egg and potato chips in separate shallow bowls. Dip turnovers in egg, then coat with chips. Place on an ungreased baking sheet. Make a 2-1/2-in. slit in top of each turnover. Bake at 375° for 18-21 minutes or until golden brown.

POTATO CHIP ENCRUSTED TUNA TURNOVERS

I was recently given quite a few cans of tuna, so I dug into my collection of tuna recipes to see what I could come up with. I used to make these turnovers for my daughter when she was little; she loved them! Sometimes I would wrap them well in aluminum foil, put them in a wide mouth thermos, and they would still be warm come lunch time at school. These are a snap to prepare, and are thrifty and good. The potato chip crust makes them a little 'special', for kids and adults! They can be made into a hearty appetizer by tearing the dough for each biscuit in half and halving the filling.

Potato Chip Encrusted Tuna Turnovers image

Steps:

  • Pre-heat oven to 375 degrees.
  • Combine the tuna with the salt and pepper, cheese, olives, and mayonnaise.
  • Separate the biscuit dough into 10 biscuits; roll or press each into a four or five-inch circle. Spoon about 1/4-cup of the tuna mixture onto the center of each biscuit. Fold the dough in half over the filling; press edges with a fork to seal. Make two or three 1/2-inch slits on each top.
  • Brush each turnover on each side with the beaten egg, then press both sides into the crushed potato chips. Bake on an ungreased cookie sheet for 18 to 24 minutes until deep golden brown.

Potato-Feta Bourekas image

Steps:

  • Preheat oven to 400 degrees, with a rack in center. Place potato on rack; bake until tender when pierced with a knife, about 1 hour. When cool enough to handle, remove potato skin and mash until smooth. Combine 1 cup mashed potato with feta and chives. Season with salt and pepper. Whisk 1 egg; stir into mixture.
  • On a lightly floured surface, roll pastry into a rectangle; cut into six 4-inch squares. Place 1 heaping tablespoon of filling in corner of each square, leaving a 1/2-inch border. Whisk remaining egg with 1 teaspoon water. Brush borders with egg wash; fold dough over filling and press edges to seal, forming triangles. Crimp edges with a floured fork. With the tip of a sharp knife, cut vents in each pastry. Arrange turnovers on a parchment-lined baking sheet and freeze until firm, 20 minutes (or, wrapped in plastic, up to 2 days).
  • Brush turnovers with egg wash; sprinkle with seeds. Bake, rotating sheet halfway through, until deep golden brown and puffed, 25 to 27 minutes. Transfer using parchment to a wire rack; let cool completely.

1 medium russet potato, scrubbed and pricked all over
3 ounces feta, crumbled (1/2 cup)

ROASTED POTATOES WITH ANCHOVIES AND TUNA

In this pantry-friendly recipe, golden, crackling-skinned potatoes move from side dish to main course after being tossed with tuna, capers and a pungent sauce of anchovies melted in brown butter. It's extremely adaptable. If you don't have (or like) tuna, use chickpeas or white beans instead. Just don't skimp on the onion, which adds a crisp sweetness to the potatoes. With their slightly thicker skins, fingerlings work especially well here, but use whatever you've got.

Roasted Potatoes With Anchovies and Tuna image

Steps:

  • In a medium pot, cover potatoes with at least 1 inch of water, and add a generous amount of salt. Bring to a simmer, then cook until potatoes are very soft, 25 to 30 minutes. You want to overcook them a little, so the insides stay creamy when they're roasted later.
  • Drain the potatoes, and let them cool until you can handle them.
  • Heat oven to 425 degrees. Use your hands to smash the potatoes to about 3/4-inch thick and transfer to a rimmed baking sheet. Toss with oil and a little salt. (The more generous you are with the oil, the crispier the potatoes will get.) Arrange potatoes in a single layer.
  • Roast until dark golden and crisp, 40 to 50 minutes, flipping them over halfway through.
  • Meanwhile, melt butter in a small pot over medium heat. Stir in anchovies and capers, and continue to cook until butter is brown and nutty. Stir in garlic and remove pan from heat.
  • Pour brown butter all over the potatoes. Add tuna (or beans) to the pan, and toss well. Season with more salt, if needed, pepper and lemon juice to taste. Scatter herbs and onions over the top and serve.

Kosher salt
Extra-virgin olive oil, for roasting
6 tablespoons unsalted butter (3/4 stick)
1 (2-ounce) tin anchovies, chopped (about 10 to 12 anchovies)

POTATOES & TUNA CASSEROLE-- NO PASTA ADDED

My SIL makes this quite often with a side dish of cooked rice and steamed broccoli. I kind of change it to suit my taste and believe it comes out perfect. Everyone finds it very tasty and without the usual pasta. I usually make it with side dish of green peas and spanish rice or simply a side salad.

Potatoes & Tuna Casserole-- No Pasta Added image

Steps:

  • Butter lightly an oven pan 9X13 size.
  • Heat the oven at: 375°F.
  • Layer the bottom of pan with first layer of raw, sliced potatoes.
  • Add layer of sliced, raw onions and first tin of tuna, carefully spreading the tuna evenly all over.
  • Add a second layer of sliced, raw potatoes, then add last of the onions.
  • Salt & pepper in between.
  • Add the rest of the second can of tuna evenly.
  • Cover with last row of potatoes.
  • In a separate bowl, mix together the celery soup with milk, mixing well.
  • Pour the soup mixture evenly over dish; cover all potatoes.
  • Cover tightly with foil or Dutch oven cover.
  • Bake for 1 hour at 375°F in center of oven.
  • Uncover, and bake 15 minutes more at 350°F and the sauce/gravy will become just the right thickness--not too thick and not too watery.

This is one of those recipes that is so beat up that it fell out of the book - The More with Less Cookbook by Doris Janzen Longacre. I learned a lot from this cookbook when I was a newlywed and new mother figuring out how to plan meals. These are great if you make your own biscuit dough but they're super easy if you use the refrigerated kind!

Steps:

  • Combine all ingredients except biscuit dough.
  • Prepare biscuit dough - or open the tube :).
  • If homemade dough, roll out to 1/8-to 1/4 inch thickness. If premade biscuit dough, flatten out each biscuit a bit - I divide them in half if they're the big fat type.
  • Cut into 4-inch squares or rounds.
  • Place about 2 1/2 T filling onto each dough piece, fold over and pinch to seal.
  • I don't bother sealing these all the way - just roll them up and pinch closed across the top. Some of the filling may sneak out the ends, but I prefer them this way.
  • Bake 15 minutes in a 400 degree oven.
  • To freeze: Bake as directed and allow to cool. Wrap in plastic wrap and then place in a freezer bag. Seal, pushing out as much air as possible. Label and freeze.
  • To serve: Allow to thaw in fridge or microwave. Good warm or cold.
