Potatoes with Toppers image

Steps:

Scrub potatoes; prick several times with fork to allow steam to escape. Place potatoes on microwavable plate. Microwave uncovered on High 3 minutes; turn potatoes over. Microwave 3 minutes 30 seconds to 5 minutes longer or until tender. Wrap potatoes in foil; let stand 5 minutes.
Cut slit in tops of potatoes and carefully squeeze to open. Top each with desired topper.

Mashed Potatoes with Toppers image

Steps:

Make desired topper first: Make mashed potatoes; Heat water, milk, butter and salt in a 3-quart saucepan; remove from heat.
Stir in potatoes just until moistened.
Let stand 30 seconds then whip with fork until desired consistency.
serve with topper.
Italian Pesto-Sour Cream Topper; mix sour cream, pesto and bell peppers; spoon onto potatoes.
Sprinkle with olives.
Mexican Chili-Cheese Topper; cook beans and tomatoes in a 1-quart saucepan over medium heat 8 to 10 minutes, stirring occasionally, until hot; spoon onto potatoes.
Sprinkle with Cheese and onions.

Steps:

Prick potatoes with a fork; cook in a microwave until tender. Meanwhile, in a large skillet, cook beef and green pepper with onion until meat is no longer pink; drain. Stir in tomato and pizza sauce; heat through. , Split potatoes lengthwise; flake potato centers with a fork. Spoon meat mixture into each; top with mozzarella cheese. Sprinkle with herbs if desired.
