SHINY COOKIE ICING

Shiny icing my mom loves to put on shaped sugar cookies. We decorate cookies around Halloween and Christmas; it's a great family tradition! Color the frosting with food coloring to your desired shade.

  • Stir confectioners' sugar, corn syrup, and milk together in a bowl until smooth.

This icing dries hard and shiny and the colors stay bright. Choose as many different food colorings as you desire.

Sugar Cookie Icing image

Steps:

  • In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
  • Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

POURED COOKIE ICING

This recipe is from Wilton.com. This icing dries to a shiny, hard finish. Great to use for icing or to outline and fill cookies with cake tip number 2 or 3. I used this on sugar cookie cutouts, and it worked great. You can add food coloring to it if you want different colors. Easy to write on cookies with.

  • Place butter in a small saucepan over medium heat. When butter has melted, whisk in remaining ingredients until very shiny and smooth (sugar has dissolved completely). Remove from heat and allow to cool slightly.
  • Check consistency of icing: it should be thin enough to be pourable, but not so thin that it runs off the sides of the sugar cookie. If too thick, whisk in more water a few drops at a time. If too thin, whisk in more sugar until the icing reaches your desired consistency.
  • Transfer icing to small pitcher and swirl artfully over cooled sugar cookies. Let icing cool and harden. Serve.

  • In a large bowl using a hand mixer or a stand mixer fitted with a whisk attachment, beat all of the icing ingredients together on high speed for 1.5 – 2 minutes. When lifting the whisk up off the icing, the icing should drizzle down and smooth out within 5-10 seconds. If it’s too thick, add a little more water. (On particularly dry days, I use up to 12-14 Tablespoons water total.) If it’s too thin, add a little more sifted confectioners’ sugar.
  • Icing completely dries in about 2 hours at room temperature. If you’re layering royal icing onto cookies for specific designs and need it to set quickly, place cookies in the refrigerator to help speed it up. See blog post above for make-ahead and freezing instructions.
