OLD FASHIONED PRUNE CAKE
This is a very moist and rich cake. A little troublesome, but well worth it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt or tube pan.
- In a medium bowl, mix together flour, soda, salt, allspice, cinnamon and nutmeg. Set aside.
- In a large bowl, combine oil, eggs and 1 1/2 cup sugar. Beat 2 minutes at medium speed.
- Add flour mixture, alternating with 1 cup buttermilk, starting and ending with dry ingredients. beat well after each addition. Stir in prunes, pecans and 1 1/4 teaspoon vanilla.
- Pour into greased and floured bundt or tube pan and bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick comes out clean when inserted in the center.
- Make large, deep holes in hot cake and pour topping in holes and on top of cake a little at a time, giving it time to soak in.
- For the topping: In saucepan, over medium heat, cook butter, 3/4 cup buttermilk, corn syrup and 1 1/2 cup sugar until sugar and butter melt. Remove from heat and add 2 teaspoons vanilla and stir.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch tube pan.
- In a large bowl, mix the shortening and sugar with an electric mixer until smooth. Mix in the eggs one at a time, then stir in the vanilla and prunes. Sift the flour, allspice, nutmeg, cinnamon, salt, baking powder and baking soda into a large bowl or onto a sheet of waxed paper. Stir in the dry ingredients 1/3 at a time, alternating with the buttermilk. Mix in the walnuts if using. Pour batter into the prepared pan.
- Bake for 50 minutes in the preheated oven, or until a toothpick inserted in the crown of the cake comes out clean. Cool on a wire rack for at least 10 minutes before inverting onto a serving plate.

SPICED PRUNE CAKE

- Preheat oven to 325 degrees. Butter and flour a nonstick Bundt pan (12-cup capacity), tapping out excess flour; set aside.
- Bring a small saucepan of water to a boil; remove from heat, and add prunes. Cover, and let soak 10 minutes. Drain prunes and finely chop; set aside.
- Meanwhile, in a large bowl, whisk together flour, granulated sugar, cinnamon, cloves, nutmeg, salt, and baking soda; set aside. In a medium bowl, whisk together oil, buttermilk, and eggs. Add oil mixture to flour mixture; mix just until combined. Stir in prunes and nuts.
- Spoon batter into prepared pan, and bake until a toothpick inserted in center of cake comes out clean and the cake has pulled away completely from sides of the pan, 1 hour and 45 minutes to 2 hours.
- Immediately invert onto a cooling rack; let cool completely. Dust with confectioners' sugar, if desired.
PRUNE SPICE CAKE
Steps:
- 1. Preheat oven to 350F. Grease and flour a 10-inch tube pan. 2. Beat eggs in a medioum bowl. Add sugar and beat well. Mix in oil. In a small bowl, dissolve baking soda in buttermilk. Sift flour, salt, nutmeg, cloves and cinnamon. Add flour mixture alternately with buttermilk mixture to egg mixture. Fold in Prunes. 3. Pour batter into pan and bake about 1 hour or until a toothpick inserted in the center comes out clean. 4. To prepare the frosting, combine sugar, baking soda, buttermilk, butter and salt in a medium saucepan. Bring to a boil, Remove from heat and stir in vanilla. Poke holes in cake with a fork or long toothpick and pour frosting over cake while both are still warm. Tip: Soak prunes briefly in boiling water so they can be chopped or torn apart easily by hand after they are drained and cooled. The baking powder causes the icing to foam while cooking.
BABY FOOD PRUNE CAKE
Mom used to make this when I was young. So glad I found the recipe!! You can top this cake with a dusting of powdered sugar.

- Combine prunes and water in a microwave safe bowl.
- Microwave on high for 2 minutes.
- Drain reserving liquid.
- Puree prunes in a food processor or blender.
- Preheat oven to 350 degrees.

- CAKE.
- Blend sugar, oil and eggs.
- Sift together all dry ingredients and add alternately with buttermilk.
- Add vanilla, prunes and pecans.
- Pour into buttered bundt pan.
- Bake 350°F for 45 minute.
- leave cake in pan and ice while warm.
- ICING.
- Combine last 6 ingredients in saucepan and bring to a boil.
- Cook until soft ball stage (small amount dropped into cool water forms a soft ball).
- Pour over cake while warm.
- Serve with whipped cream and cherries or plain.
