SIMPLY PUMPKIN PANCAKES

Quick, easy, delicious pumpkin pancakes from scratch. Developed for my pumpkin-loving grandson who will eat almost anything containing pumpkin. Serve warm with butter and syrup.

Simply Pumpkin Pancakes image

Steps:

  • Sift flour, sugar, baking powder, cinnamon, and nutmeg together in a bowl.
  • Whisk milk, pumpkin, egg, and oil together in a bowl. Pour milk mixture into flour mixture and stir until just moistened. Batter will be slightly lumpy.
  • Heat a lightly oiled griddle over medium-high heat to 350 degrees F (175 degrees C). Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 1 to 3 minutes. Flip and cook until browned on the other side, about 1 minute more. Repeat with remaining batter.

A nice way to start Thanksgiving Morning with these moist and spicy pancake! You can use can or your own roasted and pureed pumpkin, butternut, acorn squash, sweet potatoes, or your favorite squash. Try topping with Amaretto Pecan Syrup recipe #70565 or and Pecan Honey Butter recipe #69286

Pumpkin (Or Squash) Pancakes image

Steps:

  • In a large bowl, sift together flour, baking powder, salt, and spices.
  • Set aside.
  • In another bowl, beat eggs slightly.
  • Add pumpkin or squash puree, brown sugar or molasses, buttermilk and olive oil.
  • Mix until smooth.
  • Blend in the dry ingredients all at once.
  • Mix until batter is smooth.
  • Allow batter to rest for 30 minutes or more.
  • Stir cranberries and nuts into batter, and if batter is to thick thin with additional tablespoon of buttermilk.
  • To make pancakes, spoon a heaping tablespoon of batter onto a lightly greased preheated griddle or heavy skillet.
  • Cook slowly until bubbles appear on top and bottom is golden brown.
  • Lift edge to check.
  • Turn and cook until other side is golden brown.
  • Continue making pancakes until all batter is used.
  • Makes about 24, 3-inch pancakes.
  • Garnish with cinnamon & powdered sugar, maple syrup or your favorite pancake syrup.

  • Fry slowly in lots of fat in a cast iron skillet over medium-low heat OR on a griddle with a bit of butter at about 300-350F. Watch for the bottoms to begin browning when the edges look dry and flip once. If you find the pancakes are very thin and breaking apart, add a bit more flour or sourdough starter to the batter.
  • The lazy way: Instead of separating the eggs, just mix everything together willy nilly in one bowl. The pancakes might not have as much height or fluff, but they’re still perfectly fine, especially for a weekday morning! I often use my stick blender to whiz it all together, especially if I have un-pureed squash or sweet potato.
