If you like pumpkin pie and you like cappuccino, you'll like this. Posted in reply to a recipe board request. Prep time is for steaming the cream/milk. Cook time is for brewing your coffee. Recipe #1 makes 2 servings; recipe #2 makes 1 serving.

Pumpkin Pie Cappuccino (#1 and #2) image

Steps:

Pumpkin Pie Spice: Mix together and store in tightly covered container.
Pumpkin Pie Cappuccino (1): Combine about 4 ounces of light cream with 1/2 teaspoon of pumpkin pie spice*, steam lightly.
Fill two heavy mugs about half full with your favorite coffee.
Top each with steamed cream/spice mixture.
Garnish each with 2 Tablespoons whipped cream, and a tiny sprinkle of pie spice*.
(If you like, you can add a drop of yellow and red food coloring to the cream before it is whipped to make it pumpkin colored.) Pumpkin Pie Cappuccino (2): Foam (steam) the milk.
Combine ingredients in a 6 ounce glass or mug.
Mix well.
Sprinkle with cinnamon and nutmeg.

Steps:

Mix the ground coffee, allspice, and cinnamon in a small bowl, and place into the filter of a drip coffee maker. Pour 4 cups of water into the coffee maker, and turn on the machine. When coffee has finished dripping, pour into 2 cups. Stir in cream and sugar to taste.

Steps:

Into medium-large bowl, mix all ingredients except syrup until smooth. Batter will be thick.
Spray griddle with cooking spray; heat over medium-high heat. For each pancake, pour about 1/4 cup batter onto hot griddle. Cook until bubbles form around edges. Turn pancakes; cook about 3 minutes or until golden brown on bottom.
Serve pancakes with maple syrup.

As I can't have neither dairy nor soy and rice milk cannot be steamed, I thought of another way to get a creamy "cappuccino". If you have fresh organic eggs which are safe to eat raw or warmed, make this as suggested. If not, just use steamed milk or soymilk on top of your coffee! But I found this to be a great protein post work out snack.

Steps:

Brew coffe as you're used to. It should be really steaming hot. Stir in molasses.
Place egg, rice milk and pumpkin pie spice in a blender and blend until foamy.
Slow speed down and slowly drizzle in the steaming hot, sweetened coffe.
As soon as all coffee is incorporated in the egg mixture, give it another whirl at high speed.
Serve immediately.
If made with steamed milk, stir half of the spice and molasses into the coffee and heat the other half of the spice with the milk. Steam milk and top coffee with steamed spiced milk.
