WHOLE QUAIL WITH STICKY RICE WITH CHINESE SAUSAGE

Whole Quail with Sticky Rice with Chinese Sausage image

Steps:

  • To make the quail with rice:
  • Rinse the rice 2 times in a bowl of cold water and drain. In a large ovenproof pot, combine the rice, sausages, chestnuts, sugar, soy sauce, dried scallops, gingko nuts, ham, dates, wine, and dried shrimp. Add a scant 3 cups of water, put in a steam oven, and cook until cooked through and soft, 30 to 45 minutes. Fold in the edamame. Taste and adjust the sugar, soy sauce, and salt. Let cool and then fold in the scallions. Stuff about 1/2 cup of the rice mixture into each quail.
  • To make the scallion oil:
  • Put the scallions in a bowl, cover with the oil, and season with salt and pepper, to taste. Puree in a blender and strain through a very fine-mesh sieve, gently pressing to extract the pulp. Add the ginger, to taste.
  • To make the garlic chives:
  • In a small skillet heat the oil over medium heat. Saute the garlic chives, seasoning with salt, until slightly caramelized. You can add a bit of water to help cook the chives through before burning, if needed.
  • To serve:
  • Preheat the oven to 500 degrees F.
  • Heat a large skillet with a little oil. Sear the birds breast side down and then put in the oven until golden, 2 to 3 minutes. Then turn the birds and repeat the process on the other side, cooking until the birds are cooked and the rice is heated through.
  • Serve the whole quail on a bed of chive buds with a few dots of scallion oil to garnish the plate.

2 cups short grain glutinous rice
2 Chinese sausages, cut into rounds
1/4 cup roasted, peeled, and diced chestnuts
3 tablespoons sugar, more if needed
2 tablespoons soy sauce
2 tablespoons dried scallop, reconstituted in water
2 tablespoons gingko nuts
2 tablespoons cubed Chinese ham
1 tablespoon red dates, reconstituted in water
1 tablespoon shao xing cooking wine
1 teaspoon dried shrimp, finely chopped
1/4 cup edamame peas
2 tablespoons thinly sliced (on the bias) scallion greens
8 (4 ounce) boneless quail
1 scallion green, blanched, shocked, and squeezed dry
1/3 cup soybean oil
Salt and freshly ground black pepper
1 teaspoon pulverized fresh ginger, or to taste
1 cup soybean oil
2 cups garlic chives, cut into 2-inch lengths

Easy Grilled Quail image

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine parsley, paprika, garlic powder, salt, and pepper in a bowl. Add olive oil and stir until evenly combined. Brush seasoned oil over both sides of the quail.
  • Grill for 8 minutes. Carefully flip with tongs and grill for 8 minutes more.

Stuffed Boneless Quail with Wild Rice, Sage and Apples image

Steps:

  • Preheat oven to 375 degrees. Wash the quail and rub the inside of the cavities with salt and 1 teaspoon of orange zest.
  • In a small pot bring the vegetable stock and the wild rice to a boil. Add the bay leaf and reduce the heat to a simmer for 35 to 40 minutes or until all the liquid is absorbed. Heat a nonstick pan and spray with vegetable oil. Saute the onions until translucent, add celery, sage and apples saute for 2 minutes and transfer to mixing bowl. Add the egg white, remaining orange peel, walnuts, black pepper, cooked wild rice and parsley to the mixing bowl. Stuff the cavities of the quail with the wild rice stuffing and place into a nonstick pan with vegetable spray. Lightly season the quail with salt and cracked black pepper and bake for 35 to 40 minutes.
  • When the quail is done, remove from the pan and deglaze with a 1/2 cup of chicken or vegetable stock. If available add a 1/4 cup of brown stock to the mixture and simmer for 5 minutes. Strain and ladle over quail. Garnish with blanched lemon peel.

Boneless Quail Stuffed With Wild Rice and Mushrooms image

Steps:

  • Prepare the quail and set aside.
  • Cook the wild rice and drain.
  • Heat the butter in a skillet and add the onion and shallots. Cook, stirring, until wilted. Add the mushrooms and cook about one minute, stirring. Add the wild rice, salt and pepper to taste. Sprinkle with bourbon and stir. Remove from the heat and let cool.
  • Spoon equal portions of stuffing onto the opened quail. Carefully fold over the quail halves to enclose the filling.
  • Lay out eight squares of plastic wrap, one square at a time. Place one stuffed quail in the center and carefully fold the plastic wrap to enclose the stuffed pieces. Wrap securely.
  • Place the stuffed quail in one layer in the top rack of a steamer. Set aside. Add enough water to boil in the bottom of the steamer to steam the quail when added.
  • When ready to cook, place the quail over the steamer and cover closely. Let the quail steam for 15 to 20 minutes or until done. Serve with cream of chicken sauce. A serving suggestion: spoon a little of the sauce onto a hot plate, top with two stuffed quail and sprinkle with 1 tablespoon parsley. Spoon the remaining sauce over the quail.
