RAISIN BRAN BREAD

Easy & delicious idea for a last minute breakfast potluck or holiday gift. It looks beautiful, too. I'm not sure where this recipe came from, but it could have originally been from a cereal box. Post Raisin Bran has the biggest flakes, which makes it look especially pretty for presentation, but any raisin bran cereal will do....

Raisin Bran Bread image

Steps:

  • 1. Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.
  • 2. Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.
  • 3. Add egg and 3/4 cup sugar, mixing well with a large spoon.
  • 4. Stir in flour, baking powder, and cinnamon until well-blended.
  • 5. Mix in the chopped walnuts, if desired.
  • 6. Spread into prepared loaf pan.
  • 7. FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.
  • 8. Gently press topping and walnut halves into the batter.
  • 9. Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...
  • 10. ...OR serve warm with butter or cream cheese. =^..^=
  • 11. OPTION: In place of cinnamon, add 1 tsp. vanilla extract with the milk in Step #2.

1 1/4 c milk
1 egg
3/4 c white sugar
2 c all-purpose flour
1 Tbsp baking powder

1 Tbsp white sugar

Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add the raisins.

Raisin Bran Quick Bread image

Steps:

  • Pre-heat oven to 350 deg F.
  • Mix 1 ½ cups of Raisin Brand, Milk, 2 tablespoons of the Margarine in bowl.
  • Add Egg and ¾ cup Sugar, mix well.
  • Stir in Flour, Baking Powder and Cinnamon.
  • Mix till well blended.
  • Put in sprayed 9X5 loaf pan.
  • Mix remaining ½ cup of cereal, 2 tablespoons Margarine and 1 Tablespoon Sugar.
  • When well blended sprinkle over batter and press into the batter.
  • Bake 50 minutes. Cool 10 minutes before removing from pan.

Margaret's Raisin Bread image

Steps:

  • Preheat the oven to 350 degrees F. Heavily grease and flour the insides of three empty 15-ounce cans. In a medium heatproof mixing bowl, pour the boiling water over the raisins and baking soda. Set aside to cool. In a medium mixing bowl, sift together the flour, sugar and salt. Stir in the bran flake crumbs. Lightly beat together the egg and oil, and stir into the flour mixture. Stir in the cooled raisins and water. Divide the batter evenly among the 3 cans, filling about three-quarters of the way up. Bake on the lowest rack until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Cool for about 10 minutes and run a knife along the sides of the can to remove. If packing as gifts, just wrap in the can!

Steps:

  • In a large bowl, combine 1 1/3 cups flour, wheat bran, wheat germ, brown sugar, undissolved yeast, and salt. Heat water, milk, and butter until very warm (120* to 130*F). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in raisins and enough remaining flour(use oat flour first) to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough in half; roll each to 12 x 7-inch rectangle. Beginning at short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam sides down, in 2 greased 8-1 / 2 x 4-1 / 2-inch loaf pans. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.
  • Bake at 375*F for 20 to 25 minutes or until done.
  • Remove from pans; cool on wire racks. Enjoy!

  • Grease bottom only of a 9x5x3-inch loaf pan.
  • TOPPING--------.

Steps:

  • Preheat oven to 350.
  • Grease 9x5x3 inch loaf pan.
  • Combine raisin bran cereal, milk, applesauce, eggs and vanilla. Let stand for 10 minutes.
  • Stir to break up cereal. Stir in apples and walnuts.
  • Combine flour, sugar, baking powder and baking soda.
