- In a large bowl, cream butter and sugar until light and fluffy, about 5 minutes. Beat in extract; gradually add flour until dough forms a ball. Cover and refrigerate until dough is easy to handle, 1 hour. , Preheat oven to 350°. Roll into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center. Fill with jam., Bake until edges are lightly browned, 14-18 minutes. Remove to wire racks to cool. , If desired, spoon additional jam into cookies. Combine confectioners' sugar, extract and enough water to achieve drizzling consistency; drizzle over cookies.

Steps:
- Combine graham cracker crumbs, brown sugar, and cinnamon in a bowl; stir in melted butter. Set aside 1/2 cup of graham cracker mixture; press remaining mixture into a 9x13-inch dish. Chill crust until firm, about 30 minutes.
- Beat cream cheese, confectioners' sugar, and 1 teaspoon vanilla extract together in a bowl until soft and fluffy. Spread cream cheese mixture over graham cracker crust and chill until firm, about 30 more minutes.
- Whisk raspberry gelatin and boiling water together in a separate large bowl until gelatin has dissolved; stir in lemon juice. Gently fold frozen raspberries into warm gelatin; cold raspberries will cause gelatin to begin to set. Spread raspberry mixture over cream cheese layer in pan.
- Spread whipped topping over raspberries and sprinkle dessert with reserved crumb topping. Chill at least 2 more hours.

- In a large bowl, cream margarine and sugars. Beat in egg and vanilla. Combine flour, baking powder, baking soda and salt; add to creamed mixture. - Heat oven to 350°F Lightly spray 16 regular-size muffin cups with cooking spray. In food processor, process macadamia nuts with on-and-off mothions until coarsely chopped. Add brown sugar; process until combined. Place in small bowl; set aside.
- In same food processor, process cream cheese, 2 tablespoons nut mixture and 1 to 2 tablespoons reserved raspberry liquid until smooth.
- Separate dough into 8 biscuits; separate each into 2 layers, making a total of 16 rounds. Lightly press each round in bottom and up side of muffin cup. Spoon about 1/2 tablespoon cream cheese mixture into each dough lined cup. Top each evenly with raspberries, 1 tablespoon remaining nut mixture and 1 teaspoons coconut.
- Bake 14 to 22 minutes or until coconut is lightly browned. Cool in pan 5 minutes before serving.

This is a delicious bar cookie with a raspberry and chocolate layer between a shortbread bottom layer and a crumb topping top layer. These are Christmas tradition at our house.

- Combine shortbread layer ingredients with a fork or food processor until crumbly.
- Press into the bottom of a buttered 9x13 baking dish.
- Bake for 20-25 minutes at 350*, until lightly browned. Remove and let cool for 10 -15 minutes.
- Then spread the jam over the baked shortbread layer.
- Sprinkle chocolate chips over jam layer.
- Combine Crumb topping ingredients with a fork or food processor until crumbly then sprinkle over chocolate chip layer.
- Bake at 350* for 15-20 minutes. Until top layer is lightly browned.

OMG!! RASPBERRY DREAM BARS
Welcome to heaven. This is one of the best desserts I have ever made. They are like Magic Bars but with different ingredients.... stuff I had left from Thanksgiving brunch. Just a tip, I found it easier to spread the raspberry jam after I had stirred it up a bit first. This is some tasty stuff right here!

- In a small bowl, combine the graham cracker crumbs, butter and sugar and stir with a fork.
- Press crumb mixture into a 9x13 pan. Flatten out with the bottom of a cup measure.
- Drizzle and spread condensed milk over the bread crumbs.
- Place in the freezer for 10 minutes to firm up a little.
- Spoon and gently spread raspberry jam over the top.
- Sprinkle coconut cashews and white chocolate chips over the top.
