MEXICAN WHITE CHEESE DIP/SAUCE
This dip is similar to white cheese sauces served in many Mexican restaurants. The amount of heat can be adjusted by adding your favorite chili pepper or crushed cayenne pepper to taste. As is, it is kid-friendly, quick, and delicious! It can be used as a dip for tortilla chips or a sauce for many Mexican dishes.

- Place cheese, milk, and butter in a medium saucepan over low heat. Cook until cheese has melted, stirring frequently. Stir in green chilies, cumin, garlic powder, onion powder, and cayenne pepper to taste. Add more milk if dip is too thick. Heat through and serve immediately.

- Bake, uncovered, in the preheated oven until heated through and cheese is melted, 20 to 25 minutes.

REAL MEXICAN CHEESE DIP
I got this recipe off the internet after searching and searching, I kept coming up with only the cheese dip that contains rotel, velveeta and sausage or hamburger meat. I was looking for the real mexican cheese dip like they serve in resturants here in Oklahoma. I think I finally found it!

Steps:
- Saute chopped onion in shortening.
- Add fresh tomatoes and chopped green chili peppers.
- Add 1 tsp salt and 1/2 tsp pepper.
- Simmer until well blended.
- Add 1 lb grated American cheese.
- Heat only until cheese melts.
- Serve with tortilla chips.
- Can add hot jalapeno peppers in addition to chili peppers if you like it HOT.
- Makes 1 quart.
- Freezes well.
