CLASSIC RED VELVET CAKE

The "red" makes sense, but what about the "velvet" in Red Velvet Cake's iconic name? Food historians say it was a common description during the Victorian era when the term described cakes that had an especially soft and "velvety" crumb. From the color to the crumb, this homemade Red Velvet Cake is a dessert classic. If you prefer cupcakes over cakes, our Classic Red Velvet Cake recipe works perfectly for that - check out our "Expert Tips" section for guidance.

Steps:

  • Heat oven to 350°F. Grease bottoms and sides of 3 (8- or 9-inch) round pans with shortening; lightly flour.
  • In large bowl, beat all cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat 2 minutes on medium speed, scraping bowl occasionally. Pour into pans.
  • Bake 25 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
  • In medium saucepan, mix 1/2 cup flour and 1 1/2 cups milk with whisk until smooth. Cook over medium heat until mixture is very thick, stirring constantly. Remove from heat; cool 10 minutes. In large bowl, beat 1 1/2 cups sugar and the butter with electric mixer on medium speed until light and fluffy. Gradually add flour mixture by tablespoonfuls; beat on high speed until smooth. Beat in vanilla. Fill and frost cake, using 1 cup frosting between layers. Store covered in refrigerator.

RED VELVET CRUMB BASE

I use this version primarily as a base for Volcanoes (page 74), but it could certainly be used for the Double-Chocolate Crumb Cake (page 110) or the Macaroons (page 76), or as a foundation for a special recipe of your own. The red velvet cake, like the chocolate, is already fairly moist and sticky, so it doesn't need much additional oil to hold it together.

Steps:

  • In a medium bowl, use your hands to crumble the cupcakes into small, fine bits. Add the oil, agave nectar, and salt to the crumb. Using a rubber spatula, fold together the ingredients until thoroughly combined. Store in an airtight container at room temperature for up to 4 days. For longer shelf life, store in the freezer for up to 3 weeks.

6 unfrosted red velvet cupcakes (page 97)
1 tablespoon coconut oil
1/4 cup agave nectar
1/2 teaspoon salt

  • The Best Red Velvet Bars. Once baked, this recipe is like a thick cookie mixed with a brownie. Plus, it’s red! What’s not to love? Starting with a boxed mix will keep your prep-time short, and you’ll be adjusting the extras to get that thick consistency.
  • Red Velvet Waffles Recipe. So, I actually do make these on Valentine’s Day. They’re just too perfect not to! If you’re a fan of waffles, these will make a great addition to your breakfast routine.
  • 4-Ingredient Red Velvet Swirl Fudge. This recipe is sweet, creamy, and the end result is just beautiful. The swirl of white through the red makes the whole thing pop.
  • Red Velvet Chocolate Chip Cookies. Given the mild cocoa notes, you’ll get from a good red velvet recipe, it’s not surprising that it pairs so well with chocolate.
  • Red Velvet Ice Cream Sandwiches. Looking for the perfect dessert for your next July 4th BBQ? Look no further. It’s not essential to make these into a star shape, but how could you not?

  • Red Velvet Cookie Cake. When I was a kid, I used to always request a cookie cake for my birthday. As much as I love cake, there’s just something so hard to resist about a thick slice of cookie cake.

  • Combine the red velvet cake mix, eggs and oil in a medium bowl and mix until everything is combined well. {I used a hand held mixer} Pour batter into prepared 9x13 pan and spread into an even layer.
  • In a small bowl combine all of the crumb mixture ingredients. Work the mixture together into small crumbs using a fork. Don't over work the mixture or you will get a paste and it will change the texture. Sprinkle the crumbs in an even and thick layer over the top of the red velvet cake batter. Bake for 35-40 minutes.
