RICE PILAF WITH SPINACH

This is a delicious variation of rice pilaf...and adds a bit of nutrition (shh...don't tell the kids). Neither of my kids will eat spinach on its own, but this is their favorite rice

Steps:

  • 1. Make rice per package directions.
  • 2. When rice is done cooking and ready to set, add the package of baby spinach (don't worry--it will look like a LOT of spinach, but it will be fine) and re-cover.
  • 3. Let set covered three or more minutes to steam the spinach.
  • 4. Uncover and stir until everything is blended together beautifully (see, I told you the amount of spinach would be reasonable). If needed, re-cover and let steam some more if the spinach is still too separate.
  • 5. Serve and enjoy.

2 pkg of your favorite rice pilaf (i use near east or knorr)
4 c water
2 Tbsp butter or margerine (optional)
1 pkg baby spinach

Add mushrooms, and soy sauce, increase heat to medium and continue cooking for 5 to 10 minutes, until mushrooms release their liquid. Add wine and chicken broth and simmer 5 minutes, until wine begins to evaporate. Add wheat berries, rice, thyme, rosemary, and lemon rind to heat through. Adjust seasoning, to taste.

YUMMY WHOLE GRAIN WHEAT PILAF (WHEAT BERRY)

I made this tonight and we thought it was great. Even my 20-month old daughter LOVED it and that's saying something. I know a lot of people want more whole foods in their diet but have no clue what to do with them. Whole grains can get pretty intimidating. This is a healthy, whole grain recipe that's easy as can be. I've listed the fruit and nuts at the end as optional because this is good with or without those ingredients. I like it without. You can also add some grilled chicken or shrimp and make it an entree. Let your mood dictate how you make it. :) Also, I entered this under the Kid Pleaser category only because my picky 20-month old loved this so much! :D

1 cup wheat berries, rinsed

3 tablespoons olive oil
1 large red onion, chopped (I chop mine pretty small)
3 large garlic cloves, minced
3 large carrots, chopped (I also chop this very small for my toddler)
2 cups cremini mushrooms, chopped (can use regular mushrooms or Portobello caps instead)

1/2 cup raisins (optional)
1 gala apples, diced (optional)
1/2 cup slivered almonds (optional)

SPINACH AND LEMON RICE PILAF

Great side dish for roast or grilled chicken, grilled steak or fish. The vegetables and lemon give a wonderful fresh garden taste. You can vary the amounts of the veggies to your taste. I use just a little more rice to stock than usual as I prefer a slightly drier pilaf.

SPINACH RICE PILAF

This Spinach Rice Pilaf is a great side to any chicken, meat or poultry. I was searching for this recipe after having this dish at a Greek resturant, and found it on another website. It has very little fat, and lots of spinach and other veggies, so it is healthy too.
