RICOTTA AND CANDIED FRUIT SEMIFREDDO

Semifreddo is a semifrozen custard dessert. A cassata is a Sicilian sponge cake filled with ricotta cheese and candied fruits. This recipe combines the characteristics of a semifreddo and a cassata for a super-refreshing dessert that is both cold and tart.

Ricotta and Candied Fruit Semifreddo image

Steps:

  • Place the ricotta in a mixing bowl and whip it with an electric mixer or a whisk until smooth.
  • Place the heavy cream in a mixing bowl and whip it while adding the sugar a little at a time, until well incorporated.
  • Fold the whipped cream into the ricotta, then add the following ingredients 1 at a time, mixing carefully: almonds, pistachios, lemon zest, orange zest, and chocolate.
  • Refrigerate until serving, but don't let it sit for more than 1 hour, or it will lose its fluffiness. Add the strawberries just before serving so that they don't "bleed out" and color the dish.

1/2 pound fresh ricotta, squeezed in cheesecloth if watery
1 1/4 cups heavy cream
5 tablespoons confectioners' sugar, sifted
1/4 cup blanched almonds, lightly toasted and coarsely chopped
1/4 cup pistachios, coarsely chopped
1 lemon, zest julienned
1 orange, zest julienned
1/4 cup coarsely chopped semisweet chocolate
1 1/2 cups strawberries, rinsed and patted dry

Candied Kumquat and Ricotta Tart image

Steps:

  • Thinly slice kumquats crosswise with a sharp knife, discarding seeds.
  • Bring water and 2 cups sugar to a boil in a 2-quart heavy saucepan, stirring until sugar is dissolved, then simmer syrup, uncovered, 5 minutes. Stir in kumquats and simmer gently 10 minutes. Drain and cool kumquats in a sieve set over a bowl, then return drained syrup to pan and boil until reduced to about 11/3 cups, 3 to 5 minutes.
  • Finely grind fennel seeds in coffee/spice grinder, then transfer to a bowl and whisk together with ricotta, remaining 2 tablespoons sugar, and a pinch of salt just until ricotta is slightly smoother. Whisk in sour cream until just combined and spread evenly over bottom of tart shell.
  • Arrange kumquats as evenly as possible over ricotta using your fingers or a small spoon, separating slices as necessary with a skewer, then brush kumquats with some of reduced syrup.
  • Remove side of tart pan.

1 teaspoon fennel seeds, lightly toasted
2/3 cup ricotta
1/3 cup sour cream
1 (12- to 13-inch) baked sweet tart shell

Maple Ricotta Mousse with Candied Pecans image

Steps:

  • Place syrup in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Transfer to a bowl; cool completely., In a small heavy skillet, cook and stir pecans over medium heat, about 3 minutes. Drizzle with 1 tablespoon cooked syrup; cook and stir 1 minute longer. Spread on foil to cool., In a small bowl, beat cream until soft peaks form. In a large bowl, beat ricotta and mascarpone cheeses until light and fluffy. Gradually beat in 1/3 cup cooled syrup; gently fold in whipped cream., To serve, spoon mousse into dessert dishes. Drizzle with remaining cooled syrup; top with candied pecans.
