Roasted Seckel Pears image

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl; combine the balsamic, butter, lemon juice and zest, sugar, garlic, ginger, and black pepper. Stir together well.
  • Add the pears and gently toss to coat them.
  • Arrange the pears on a nonstick baking sheet in a single layer without crowding.
  • Roast until cooked through, 10 to 12 minutes.

ROASTED PEAR SALAD

You can roast just about any kind of pear, but for this recipe I prefer the smaller and harder Seckel pears. Once roasted, they'll soften and become surprisingly sweet and floral, a perfect contrast to the salty blue cheese and slightly bitter endive.

Roasted Pear Salad image

Steps:

  • For the pears, preheat the oven to 425 degrees F. In a small bowl, drizzle the pears with the olive oil, sprinkle with the sugar and salt, and toss to coat well. Transfer the pears to a baking sheet and roast for 10 minutes, until golden brown. Allow to cool.
  • For the vinaigrette, whisk together the olive oil, pecan oil, vinegar, honey, mustard, and shallots in a small mixing bowl. Season with salt and pepper.
  • To assemble the salad, combine the endive leaves and bitter greens in a large serving bowl. Add the vinaigrette and toss to coat well. Wait until just before serving to top with the pears, blue cheese, and pecans.

Wine Poached Seckel Pears image

Steps:

  • In a large saucepan, whisk together Merlot (reserving 2 cups), star anise, cinnamon stick, and sugar. Bring to a boil.
  • Add pears and remaining 2 cups of Merlot. Allow pears to cook in the wine and flavorings, simmering at a low boil.
  • In a small bowl, whisk together mascarpone, sugar, and cream. Add fresh mint, if desired.
  • Place a dollop of mascarpone cheese onto each plate. Top with 1 or 2 pears and serve.

Sugared Seckel Pears image

Steps:

  • Beat egg whites in a small bowl. Place sugar in another small bowl.
  • Dip bottom half of each pear in egg whites. Roll in sugar, and place pears upright on parchment paper. Let stand until dry, about 1 hour. Sugared pears are best the day they are made.

PICKLED SECKEL PEARS

A spicy memory of sweet summer from Pennsylvania Dutch country. Any good preserving pear may be used, but the Seckel is preferred. From the US Regional Cookbook, Chicago Culinary Arts Institute, 1947. Cooking time is approximate. Steps:

  • Tie spices in a small cheesecloth bag and add to vinegar and sugar in stainless kettle Bring to a boil.
  • Add pears and cook until tender (the pears will look clear when tender).
  • Remove the pears with a spoon and fill sterilized jars.
  • Boil syrup until thick.
  • Pour over pears and seal.

14 lbs seckel pears, peeled, sliced and cored (or may be pickled whole)
1 quart cider vinegar

Pork Roast with Lady Apples and Seckel Pears image

Steps:

  • Preheat oven to 425 degrees, with rack in lower third of oven. Whisk together oil, garlic, rosemary, thyme, and sage in a small bowl. Season pork with salt and pepper; brush herb mixture evenly over pork.
  • Place pork, bone facing upward, in a roasting pan. Roast 15 minutes. Reduce oven temperature to 375 degrees. Roast 30 minutes.
  • Rotate pan, and add apples and pears, cut side down. Roast until pork is browned and an instant-read thermometer inserted into the thickest part registers 145 degrees, about 30 minutes more. Transfer roast to a cutting board with a well; let rest 15 minutes before cutting. Transfer apples and pears to a serving bowl.
  • To make the gravy: Drain fat from roasting pan. Place roasting pan over 2 burners. Add wine; bring to a boil, stirring with a wooden spoon to loosen any brown bits on bottom of pan. Cook until reduced by half, about 3 minutes. Stir in stock and cider; season with salt and pepper. Whisk flour with 1 tablespoon water in a small bowl until smooth; add to gravy. Cook, whisking occasionally, until completely combined and gravy has thickened, about 5 minutes. Remove from heat. Add butter; stir until it has completely melted. Pour through a sieve into a serving bowl; discard any solids.

1 bone-in pork roast, (5 to 6 pounds) frenched, room temperature
Coarse salt and freshly ground pepper
1/4 cup extra-virgin olive oil
1 clove garlic, minced

CITRUSY ROAST CHICKEN WITH PEARS AND FIGS

This juicy, citrus-scented chicken is a perfect dish for that shoulder season between summer and fall, when pears and figs overlap in the market, and evenings cool down enough to turn on the oven. As the chicken roasts, its skin crisps and its fat renders, flavoring the caramelizing fruit in the pan. Before it's served, everything is topped with a garlicky orange relish flecked with parsley and drizzled with sherry vinegar. It's a sweet and savory meal that's simple enough for a weeknight (if you can marinate the chicken the night before), yet festive enough for guests.

Citrusy Roast Chicken With Pears and Figs image

Steps:

  • Peel 2 of the garlic cloves, and finely grate or mash to a paste. Grate 1 teaspoon zest from the orange (reserve zested orange and remaining garlic clove for serving).
  • In a small bowl, combine garlic and zest with 1 tablespoon finely chopped rosemary, salt and pepper.
  • Place chicken on a 13-by-17-inch rimmed baking sheet, and rub rosemary mixture all over chicken including underneath the skin and inside the cavity. Chill uncovered in the refrigerator for at least 4 hours and up to overnight.
  • Heat oven to 450 degrees. Stuff chicken with rosemary sprigs. Drizzle chicken lightly with oil, and roast for 30 minutes.
  • Remove baking sheet from oven and carefully arrange pears and figs, cut-side down, on the hot pan. Continue to roast until chicken is cooked through, another 15 to 25 minutes.
  • Transfer chicken to a cutting board to rest for 10 minutes before carving. Roast pears and figs another 5 to 10 minutes, if necessary, until they are caramelized and tender.
  • Cut the white pith off the orange, then cut out orange segments into bite-size pieces. Finely grate or mash the remaining garlic clove.
  • To serve, transfer figs, pears and chicken to a platter. In the pan with chicken juices, toss orange segments, remaining garlic clove, and a drizzle of sherry vinegar; taste and season with flaky sea salt, if needed. Spoon oranges and pan juices over chicken and fruit on platter, and top with chopped parsley and more flaky sea salt.

1 (3 1/2- to 4-pound) whole chicken, patted dry

ROASTED SECKEL PEARS WITH VANILLA MASCARPONE CREAM AND THYME image

Steps:

  • Preheat the oven to 375 degrees. Place cored pear halves cut side up in a baking dish. Drizzle lemon juice over the tops of the pears, dot with butter and sprinkle with granulated sugar. Pour about 3 tablespoons of water into the bottom of the baking dish. Arrange thyme sprigs around the pears. Bake Seckel pears for about 30-40 minutes, flipping the pear halves to skin-side up halfway through baking. Larger pears will take longer to cook - estimate an additional 20 minutes or so. They are done when a fork easily slides through the flesh in the thickest part of the pear. Remove from oven and cool to room temperature. Meanwhile, pour cream into a medium mixing bowl. Slice a vanilla bean in half lengthwise and scrape out the seeds. Add the gooey vanilla seeds to the cream and stir, then throw in the bean pod too. Refrigerate the cream mixture and mixing bowl for an hour or more. Remove the vanilla bean pod from the cream. Add the Mascarpone and beat on medium speed until well combined. Add the powdered sugar and continue beating until soft peaks form. Top each pear with a dollop of the cream mixture. Sprinkle with chopped fresh or roasted thyme leaves (from the pear roasting pan).
