RICH ROASTED TOMATO SOUP

Rich Roasted Tomato Soup image

Steps:

  • Preheat the oven to 275 degrees F. Line a baking sheet with parchment paper.
  • In a bowl, toss the tomatoes with 1 tablespoon olive oil, salt, and pepper. Place the tomatoes, cut side down, on the prepared baking sheet and drizzle 1 tablespoon water over the tomatoes. Bake in the oven for 1 hour.
  • Remove from the oven. Carefully peel off the skins and discard. Flip the tomatoes over so they're cut side up, and place back in the oven until the tomatoes are shriveled but not dry, another 30 to 60 minutes. Remove the tomatoes from the oven and allow to cool slightly.
  • Meanwhile, in a large saucepan, saute the onion in the remaining 1 tablespoon olive oil over low heat until very soft, 10 to 12 minutes. Add the garlic and herbes de provence and cook until fragrant, another 1 to 2 minutes. Add the stock and remaining 1/2 cup water and bring to a simmer. Simmer 15 minutes. Cool slightly.
  • In a blender, puree the tomatoes (including any cooking liquid on the baking sheet) and the stock mixture until very smooth. You may need to work in batches. Strain through a fine sieve if a very smooth texture is desired. Pour the soup back into the saucepan, season with salt and pepper, and heat gently. To serve, ladle into cups or bowls and top with either a swirl of olive oil or a little sour cream, if desired.

Quick Roasted Tomato Soup image

Steps:

  • For yogurt:
  • In a big roasting pan combine everything, coat well with olive oil and roast in a preheated 400 degree F oven. Stir occasionally until everything is caramelized and black around the edges. Season with salt and pepper.
  • Run everything through a food mill on a medium dye over a medium pot.
  • If too thick, thin with water. Add milk right before service.
  • Croutons:
  • Cut whole-wheat bread into cubes and place into a large bowl, add chopped garlic and red pepper flakes. Season with salt and pepper and toss with olive oil. Transfer to a sheet pan and place in the oven for 5 to 7 minutes, until golden brown.
  • Yogurt:
  • Mix 1 pint of Greek yogurt with chopped chives. Season with salt and pepper.
  • Garnish the soup with croutons and yogurt.

Recently had an extra pint of cherry tomatoes on hand and was in search of comfort food. Devised this soup in a pinch and thought it was worth sharing. Mine was a quick soup for one but the recipe has been scaled up and uses the more economical Roma tomato. If you have lots of cherry or grape tomatoes -- they have a sweetness that pairs beautifully with the vinegar -- use them or do a mix with the roma tomatoes. If you are making this Kosher, skip the cheese or be sure to use vegetable broth.

  • Pre-heat oven to 375 degrees.
  • Wash and cut tomatoes, placing in a shallow baking dish cut side down.
  • Add onion pieces, garlic, oregano and basil to the pan.
  • Drizzle vegetables with olive oil and balsamic vinegar.
  • Season with salt and pepper.
  • Bake for 45 minutes.
  • Place roasted vegetables in food processor bowl or blender and begin puree. Slowly add broth or water until soup has desired consistency. Continue blending until smooth.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
  • Spread tomatoes, onion, and red bell pepper in 1 layer onto the prepared baking sheet. Drizzle olive oil over tomato mixture and season with salt and pepper.
  • Roast in the preheated oven for 30 minutes; add garlic and continue roasting until tomato mixture is tender, about 15 more minutes.
  • Bring chicken broth, basil, and parsley to a boil in a large stockpot; reduce heat and simmer.
  • Put half the tomato mixture into a blender. Steps:

  • Preheat the oven to 400 degrees F.
  • Put the tomatoes on a rimmed baking sheet, toss with 2 tablespoons of the garlic oil and season with salt and pepper, to taste. Roast until the tomatoes are softened and the edges are beginning to brown, 15 to 20 minutes.
  • Meanwhile, heat 1 tablespoon of the garlic oil in a saucepan over medium-high heat. Add the basil and stir for about 30 seconds. Add the canned tomatoes with their juice and the water; season with salt and pepper, to taste. Bring to a boil, then reduce the heat to medium-low and simmer for 15 minutes. Stir in the bread and simmer for 2 to 3 minutes.
  • Stir the oven-roasted tomatoes and any cooking juices into the saucepan and simmer for another 3 minutes. Taste for seasoning, adjusting if necessary, and ladle into serving bowls. Garnish with a drizzle of garlic olive oil and basil leaves.

Homemade Roasted Tomato Soup image

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Place the tomatoes cut-side up in a single layer on the baking sheet. Drizzle with 1/4 cup olive oil and sprinkle with 1 teaspoon salt, 1/4 teaspoon pepper and the sugar. Scatter the thyme sprigs over the tomatoes. Roast until the tomatoes are wrinkled and soft, about 1 hour. Let cool until cool enough to handle. Discard the thyme sprigs. Gently peel off and discard the tomato skins.
  • Heat the remaining 2 tablespoons olive oil in a large Dutch oven over medium heat. Add the onions and a pinch of salt and cook until the onions start to lightly brown around the edges, about 3 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the tomatoes, vegetable stock and bay leaf and simmer, partially covered, for 30 minutes. Reduce the heat to low, add the cream and chopped basil and simmer for 5 more minutes. Remove the bay leaf and use an immersion blender to puree the soup until smooth. Season to taste with about 2 teaspoons salt and some freshly ground black pepper.
  • When ready to serve, top with a drizzle of chile-infused oil and garnish with some basil leaves.

Steps:

  • Put a rack at the highest possible place in the oven. Preheat the broiler.
  • Line a baking sheet with aluminum foil and put the tomatoes on it so they don't touch. Broil 2 - 6 minutes, till the tomatoes char on top, then turn and repeat.
  • Remove from oven and put the tomatoes in a big bowl. Tip any juice form the pan into the bowl. When cool enough to handle, peel the tomatoes and break them up with your hands.
  • Heat the oil in a soup pot and saute onions and garlic over medium heat till they're beginning to turn golden.
  • Add sugar, tomatoes, basil, parsley, thyme, bread and salt. Cook, stirring often, till the tomatoes have cooked down and the mixture is thick and beginning to stick to the bottom of the pot.
  • Puree, using an immersion blender. (The original recipe says to strain here -- but nothing went through my strainer, so I'm skipping it!).
  • Add water and heat till simmering.

Will be making this using the grill outside rather than heat up the house when I am awash in tomatoes. Will try both on the gas grill as well as the smoker (when cooking something else LOL). Found this in Sunset's recipe gallery. It is versatile - serve hot or cold - it is simple but I bet has wonderful flavor without being heavy (too miserably hot & humid here for rich food in the summer). Another alternative to our beloved gazpacho routine. Will experiment with fresh marjoram, basils, mint, thyme & peppers in this mix as well.

Steps:

  • Rinse, core, and cut tomatoes in half crosswise.
  • Fit tomatoes, cut sides up, in 10- by 15-inch pans (you'll need 3, or use 1 pan and refill). Brush the tops of the tomatoes in each pan with 1 tablespoon oil and sprinkle with 1 teaspoon sugar.
  • One pan at a time, broil tomatoes 3 to 4 inches from heat until tops are spotted black, about 20 minutes. Adjust pan position for even heat and remove tomatoes as they are charred.
  • Meanwhile, in an 8- to 10-quart pan over medium-high heat, combine remaining oil, garlic, and onions. Stir often until onions are lightly browned and taste sweet, 10 to 15 minutes.
  • In batches, smoothly purée tomatoes and onion mixture in a blender or food processor. To remove skins, if desired, rub tomato mixture through a fine strainer into a large bowl.
  • Return tomato mixture to pan and add broth; heat to simmering, stirring. Add salt to taste. To serve cold, cover and refrigerate until chilled. To store, cover airtight and chill up to 3 days, or put in freezer containers in easy-to-use portions and freeze up to 1 year.

Steps:

  • Preheat oven to 450 degrees.
  • Wash and cut tomatoes in half (if you use anything smaller than a Campari tomato, leave it whole). Place them on a large baling sheet with the onion, garlic and thyme. Drizzle olive oil over the veggies and sprinkle with Kosher salt and a few generous turns of freshly ground pepper. Give everything a toss. Roast in the oven for 25 to 30 minutes until the veggies are carmelized.
  • Remove the thyme sprigs and pour the mixture into a medium sized stock pot or Dutch oven. Be sure to get all the juices. Add chicken broth and the bay leaf. Bring to a boil. Simmer for 25 to 30 minutes. Let cool slightly and then puree by either an immersion blender or puree in a regular blender (for a smoother texture). You can also strain the mixture if you want a more elegant soup.
  • Check for seasonings. Serve immediately or refrigerate (no longer than 2-3 days) and reheat later.
  • Garnish with a dollop of creme fraiche or other toppings, as desired.

  • Line a baking sheet with foil Put washed tomatoes onto sheet. Preheat broiler and place baking sheet 2-3 inches from broiler. Broil 2-3 minutes watch you want them charred. Take from oven and turn tomatoes and cook that side same way. Remove from heat and tip tomates and juice into bowl. Let cool. . When cool enough peel, core and chop coarsly. Do this over the bowl to preserve juice.
  • Heat oil . Chop onion and mince garlic. Cook onion in oil about 5 minutes then add garlic for another minutes. . Stir in sugar, basil, parsley and thyme. If using sprigs 2 each. If using dry 1/2 teaspoon or to your taste. and 2 teaspoons salt. Toast breat lightly and add. Cook until thickened and trying to stick to bottom about 20 minutes. At this time taste and adjust salt and add pepper. Using your food processor blend until smooth then put through strainer, Rinse out food processor with the 2 cups of water and add to soup and simmer 15 minutes. Taste for salt again.
