CHICKEN DISH FROM NETHERLANDS ANTILLES - ORIGINAL
This recipe has been in my family for years, we've got it from a neighbour in Rotterdam (Netherlands). I am sure my mother has changed it some over the years, but this is as I recall it. The entire recipe is a matter of taste, some like lots of veggies and a mild flavor, some like little veggies and a blasting hot flavor with 8 cloves of garlic -- Try and see what works!

Steps:
- Cut the wings at the joints so you have 3 pieces, or simply use drumsticks. You can skin the chicken if you want to, we never do. Cut the bell peppers and onions in strips. Peel the garlic and mash it up.
- Put some oil, butter or even pam in a medium hot skillet(a large and deep skillet!) Add the chicken and cook until the chicken seems to get done some.
- Add the onions, garlic and bell peppers and stir-fry the whole lot for a while to add some color to the vegetables.
- Cut the stewed tomatoes in smaller bits and add to the dish along with the tomato paste, fill the empty cans with water and add also. Add some sambal (1 teaspoon in our version) or hot sauce. Add stock cubes (one or two is usually enough, again, this is something to do to taste).
- Let the whole thing simmer for about 15 minutes, which gives you time to cook some rice with it ;).
- Taste, add salt and sambal if needed. add a pinch of sugar if the tomatoes taste a bit tangy. Serve with rice.

MOR'S DANISH CHICKEN DISH

Steps:
- Divide the chickens into 8-10 pieces or ask the butcher to cut them up for you.
- Cut the bacon into small pieces.
- Clean the mushrooms and cut them in halves or quarters if they are large.
- Melt the butter in a large pot and brown the chicken pieces a few at a time.
- Remove the chicken to a plate.
- Fry the bacon, mushrooms and onion, then place the chicken back in the pot.
- Add salt and pepper.
- Let it stand a moment to reheat well.
- Then flambe with the cognac.
- (Make sure you turn off the exhaust ventilation first).
- Now add the white wine.
- Add soy sauce and minced garlic.
- Let it cook for 30-40 minutes, depending on the size of chicken.
- Remove the chicken pieces.
- Thicken the sauce with the 3 Tbsp.
- flour and water.
- Let it boil a few minutes, taste for more seasoning if desired.
- Add the chicken pieces back into the sauce, heat through while you cook rice to serve.
- Sprinkle the chopped parsley over the dish just before serving.

BARBARA'S CHICKEN DISH
My mate Barb makes this wonderful dish brilliantly, even after half a bottle of white wine:) you can add tomato paste if you like, or even chopped capsicum or mushrooms. This dish is fine with just wine and water, but much much better with well flavoured chicken stock. I like to use about 1/2 cup of stock that I get when I do chinese chicken wings. You can use lite sour cream for this dish, but the sauce with most likely seperate, still tastes great though.

Steps:
- Heat the olive oil in a large fry pan.
- add the chicken, (cut in bite sized pieces) and the chopped onion.
- stir for about 2 minutes.
- add the garlic, and continue cooking till the chicken is golden.
- add the white wine.
- add the tomatos.
- add the stock or water.
- simmer until chicken is cooked and the sauce is reduced.(thats why you use a LARGE pan.).
- when done, salt and cracked pepper to taste, turn off heat and cover.
- when ready to serve, re-heat, stir in the sour cream, but dont re-boil.
- serve over pasta, (I like curls) with a green salad.
