BONEFISH GRILL LEMON BUTTER SAUCE
A rich, classic sauce for fish and poultry. I found this recipe at their online site. I love their lemon butter sauce.

Steps:
- Place the first 4 ingredients, into a sauce pan and simmer over medium high heat until the volume is reduced by half. Reduce heat to low.
- Now slowly begin adding the pieces of cold butter (in ¼ inch squares), whisking continuously after each addition to maintain a smooth consistency.
- Add salt and strain sauce into a small pan to remove any solids. Sauce should be creamy and smooth. Serve immediately.
SPINACH ROCKEFELLER
Steps:
- Preheat the oven to 400 degrees F.
- Saute spinach and garlic in olive oil. Deglaze with liqueur and season with salt and pepper, to taste. Add cream and Parmesan. Fill oysters with spinach mixture. Bake for 10 minutes.
ROCKFISH WITH TOMATOES, CAPERS, LEMON, ARTICHOKES, AND FENNEL
Steps:
- Trim the artichoke leaves and stems and blanch in salted, boiling water with a little of the lemon juice. Use only enough water to cover. When tender remove from the water, cool, and clean. Save the leaves for another use. Discard the hairy choke and save the hearts and stem for the dish. Slice into 1/8-inch slices.
- In a saute pan over high heat, add 1 tablespoon olive oil and saute the fennel in it until tender. Add salt and pepper, to taste, remove and keep warm.
- Wipe out the saute pan and add in the peanut oil and bring to medium high heat. Salt and pepper the fillets and brown on 1 side about 5 minutes. Turn and saute 2 more minutes and remove from the pan. Add the sliced garlic and 1/2 of the remaining olive oil and cook 2 minutes. Add the sliced artichokes and saute until starting to brown. Add the tomatoes, white wine, stock, lemon zest and juice, and remaining olive oil and reduce the liquid by 1/4.
- Return the fish to the mixture, add the capers and basil, and check salt and pepper. Cook 2 more minutes until fish is just flaky and check salt and pepper. Divide the fennel among 6 warm dinner plates and top with the fillets. Sauce with the vegetable mixture and serve.
ROCKEFELLER DORADO (BONEFISH COPYCAT)
A creamy lump crab and spinach sauce atop a tenderly cooked Mahi Mahi fillet (thank you Bonefish...)

Steps:
- Preheat oven to 350°F.
- Baste Mahi fillets with lemon juice; bake 15-20 min or until fillets flake easily with a fork.
- For Rockefeller topping, begin by melting butter in a large saucepan.
- Stir in flour until smooth.
- Gradually add milk and bring to a boil; cook and stir 2 min or until thickened.
- Reduce heat and add cheese, stirring until smooth.
- Add the crab and spinach, stirring until until crab is heated thoroughly.
- Serve topping over Mahi fillets (suggested side: Garlic Whipped Potatoes).
ROASTED ROCKFISH ROCKEFELLER
Steps:
- Make Rockefeller mixture: Saute spinach. Mix in cream, ham and Parmesan cheese. Poach the oysters in fish stock, then add to spinach mixture.
- To make the sauce: Reduce fish stock, add garlic, shallots, saffron and Pernod. Season with salt and pepper. Thicken with arrowroot, if needed.
- Preheat oven to 350 degrees. Prepare the fish: Use 2 pieces of fish. Leave 1whole and cut a slit in the middle of the second. Place stuffing on whole piece. Lay the second piece over the stuffing so the stuffing shows through the slit. Bake in oven for about 15 minutes.
- Make the Sweet Potato Napoleon: Deep-fry the 1 sliced sweet potato until crisp. Boil the rest of the potatoes until soft. Put through food mill. Plate by layering the sweet potato chips and pureed potatoes.
- Make the Parisian Vegetables: Make Parisian balls with a melon scoop out of the zucchini, summer squash, and turnip. Blanch and toss in butter.
- Deep-fry the fennel flames.
BAKED ROCKFISH
It's hard to believe that this pesto-coated fish dish contains only five ingredients!

- Heat oven to 375°F. Grease rectangular baking dish, 13x9x2 inches.
- Mix pesto, lemon juice, carrot and leek. Place fish in dish. Spread vegetable mixture over fish.
- Cover and bake about 40 minutes or until fish flakes easily with fork.

- In a large saucepan, melt 2 tablespoons butter. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add the cheese and stir until smooth. Add the spinach and crab., Transfer to a greased shallow 1-qt. baking dish. Melt the remaining butter; toss with bread crumbs.
