Steps:
- Set rack at lowest position in oven and preheat to 500°F.
- Heat oil in small skillet over medium-high heat. Add onion and chopped rosemary; saute until golden, about 10 minutes.
- Transfer to medium bowl. Add sausage, mustard, and generous amount of freshly ground black pepper. Mix gently. Form into twelve 2-inch diameter patties. Arrange sausages on heavy baking sheet. (Can be made 1 day ahead; chill.).
- Bake sausages until just cooked through, about 6 minutes. (If sausages have not browned, broil 2 minutes.).
- Transfer sausages to paper towels to drain, then arrange on platter.

Steps:
- Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.
SAUSAGE LINKS WITH APRICOT-MUSTARD GLAZE

Steps:
- Whisk apricot preserves in heavy medium saucepan over medium heat until melted and smooth, about 1 minute. Add mustard and whisk until beginning to simmer, about 30 seconds. Remove from heat. Stir in chopped rosemary. Season glaze to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Stir over medium heat until heated through.)
- Heat oil in heavy large skillet over medium-high heat. Add sausages and sauté until browned and cooked through, about 10 minutes. Transfer to saucepan with glaze. Stir over medium heat until sausages are glazed, about 1 minute. Transfer to platter and serve.
