ROAST LEG OF LAMB WITH PANCETTA, SAGE AND ROSEMARY

Roast Leg of Lamb with Pancetta, Sage and Rosemary image

Steps:

  • With a knife, follow the lamb bone down about 4 inches (you are just making a 'tunnel' where you are cutting the meat away from the bone). Do this from the top end and the bottom end. Pierce the skin at an angle with a sharp pointed knife 6 to 8 times at random around the leg. Where you have made the incisions, open them up a bit by poking your fingers down in them to make a bit of space.
  • Using a pestle and mortar smash up half the sage with the garlic and 1 teaspoon of salt. When its pulped, add the lemon juice, 2 tablespoons of olive oil, the other half of the sage and the rosemary roughly chopped. Stuff the mixture into all the incisions and gaps you have made with the knife. Then stuff the pancetta deep into the gaps along the bone and the incisions. This gives a lovely fragrant flavor to the meat. Season with salt and place directly on oven shelf in a pre-heated oven 225 C/425 F/Gas 7 until cooked.

1 leg of lamb (about 4 1/2 pounds)
1 handful fresh sage
1 clove garlic
Salt and freshly ground black pepper
1 lemon, juiced
Olive oil
1 handful fresh rosemary
3 ounces pancetta, sliced

Asparagus and Bread Soup with Pancetta image

Steps:

  • In a large saucepan, sweat the pancetta with the olive oil until crispy and fully rendered, 5 minutes. Remove the pancetta from the pan and set aside. Add the onions, shallots and garlic. Lightly season with salt and pepper. Once the aromatics are soft, about 5 minutes, add the stock, bread and tarragon. Bring the mixture to a boil and add the asparagus and spinach. Simmer until the asparagus is tender, about 15 minutes.
  • Transfer the contents to a blender, and make sure you've added enough stock to achieve the desired consistency. Blend the soup and season with the lemon juice. Adjust the salt and pepper as necessary. If available, strain through a fine mesh strainer. This soup can be served hot or chilled.
  • Serve with the crispy pancetta, chopped chives and a dollop of creme fraiche. If serving cold, additional chicken stock may be necessary to make sure the consistency is correct.

  • If the fillets have not been removed from the tail then use a sharp knife to remove the bone from the middle of the monkfish. You'll then have 2 long fillets of monkfish, fat at one end and tapering to the other end.
  • Make the herb filling. Roughly chop the basil and chives, crush the garlic and put everything in a pestle and mortar with a little salt and pepper. Crush to make a paste.
  • Lay the slices of pancetta out, overlapping slightly. Lay one piece of monkfish in the middle. Spread the herb and garlic paste down one side of the fish. Put the other piece of monkfish on top. Lay them top to tail so the monkfish is approximately the same width at each end.
  • Wrap the pancetta around the fish and roll it over so the fish is wrapped in the pancetta. Heat a little oil in a frying pan. Fry briefly on all sides then put on a baking tray in the oven at about 200°c. Bake for 15 minutes.

  • Preheat the oven to 200 degrees C. Sprinkle your fish fillets with the lemon zest (without the bitter white stuff!), rosemary and fresh pepper. No salt is needed because they are going to be wrapped in delicious salty pancetta. Put the slices of pancetta on a chopping board and flatten them extra with the side of knife. Put four slices together on the board, put a fish fillet on top and roll the package closed.
  • Heat a large, ovenproof frying pan, put a little oil in and add the pieces of fish with the good side up. Fry them for about a minute and after that put the pan in the oven, for about 10-12 minutes depending on the thickness of the filet, until the pancetta is crispy and nice golden brown.
  • While the fish is in the oven you have time to make the lemon mayonnaise with either fresh mayonnaise or mayonnaise from a jar. Add enough lemon juice as the intention is for the mayonnaise to be a little bit too sour. In combination with the fish and asparagus that will be less. It's ok if the mayonaise is a little thinner then usual.
