Savory Herb Pork Roast with Gravy image

Steps:

  • 1. Preheat oven to 350 degrees F. Mix sage, garlic salt, ginger and pepper in small bowl. Place roast on rack in foil-lined roasting pan. Brush pork with oil. Sprinkle seasoning mixture evenly over entire roast.
  • 2. Roast pork 1 1/2 hours or until desired doneness. Transfer pork to cutting board or serving platter. Cover loosely with foil.
  • 3. Pour any pan drippings from roasting pan and water into medium saucepan. Stir in Gravy Mixes. Stirring frequently, cook on medium heat until gravy comes to boil. Reduce heat to low; simmer 1 minute or until slightly thickened. (Gravy will thicken upon standing.) Serve with sliced pork.

2 1/2 teaspoons McCormick® Sage, Rubbed
1 1/2 teaspoons McCormick® Garlic Salt
1 teaspoon McCormick® Ginger, Ground
1/2 teaspoon McCormick® Black Pepper, Ground
1 boneless center-cut pork roast (about 3 pounds)

Gravy for Beef, Pork, Chicken or Turkey image

Steps:

  • Variations: Add fresh sliced mushrooms, or onions, or hot pepper flakes, or any special spice to create a foreign flavor such as cummin or curry.
  • This is a basic recipe to making gravy for any type of oven-roasted meat.
  • In a small bowl, add water and flour, stirring to get out all lumps.
  • Remove meat from the roasting pan leaving all the liquid and dried bits.
  • On the stovetop, over a low heat, add water to pan drippings, stirring constantly with a wooden spoon, dissolving all the flavors from the bottom of the pan.
  • As the liquid thickens, add salt, pepper, and spices, including the gravy master.
  • If gravy is too thick, add more water, a little at a time while stirring.
  • Stop at the desired thickness.
  • Remove from the heat.
  • Pour gravy through a strainer to remove any lumps, debris that did not dissolve.
  • Fill your favorite gravy boat and serve!
  • *If gravy is too thin, add 1 teaspoons of flour at a time (again, diluted in 1/4 cup of cold water) until the desired thickness is achieved.
  • Amount will depend on how much liquid is in your roasting pan after meat has cooked.
  • By adding more water and adjusting the flavorings, you could s-t-r-e-t-c-h this recipe to accommodate the servings required, but be careful not to lose the richness of the meat flavor.

Crisp roast pork with honey mustard gravy image

Steps:

  • Heat oven to 240C/220C fan/gas 9. Pat the pork all over with kitchen paper. Lightly rub all over with oil and sprinkle liberally with salt. Cook for 20 mins, turn down the oven to 190C/170C fan/gas 5, then cook for 30 mins per 500g (about 2 hrs). Remove from the tin, place on a serving plate and loosely cover with foil.
  • Pour off excess fat from the tin. Add stock to the tin, then stir to incorporate meat juices and sticky bits at the bottom. Pour through a sieve into a small pan. Add mustard, honey and thyme, plus juices from the resting meat. Stir and simmer for 5 mins until starting to turn syrupy. Serve alongside the pork.

GARLIC ROSEMARY ROASTED PORK LOIN with Gravy image

Steps:

  • 1. Assemble and prep all ingredients.
  • 2. Place roast on your preferred, flat work surface. (I use a piece of freezer paper on a counter.)
  • 3. Tie roast in the butcher's style or tie with several lengths of butchers twine around roast. (This helps to ensure a more uniform shape and even cooking.)
  • 4. Use a paring knife to make a dozen or more 2 inch deep narrow and fairly evenly spaced slits in roast.
  • 5. Insert a sliver of garlic and a small sprig of rosemary "leaves" (NOT the whole stem,) rather deeply, into each slit.
  • 6. Thread a stem of rosemary under the twine down the center of one or both sides of the roast (optional.)
  • 7. Sprinkle generously with salt and fresh ground black pepper, then drizzle and rub all sides of the roast with olive oil.
  • 8. Place oven rack in middle position and preheat oven to 350 degrees F. (Photo: meat lifters & heavy duty tongs)
  • 9. Drizzle enough olive oil into a large skillet to cover the bottom; on medium-high heat on stove top, heat oil to a shimmer.
  • 10. Place roast in hot skillet and brown on all sides for approximately 1 1/2 to 2 minutes each turn. (Use sturdy tongs or meat forks to turn roast.)
  • 11. Remove from heat; cover skillet with lid or tightly fitted aluminum foil.
  • 12. Bake at 350 degrees F for approximately one hour or until meat thermometer inserted into center of thickest part reads 150 degrees F. (If roast looks a little pale, increase oven temperature to 475 degrees F, remove lid or foil, remove rosemary stem/stems from underneath twine and roast for an additional 10 to 15 minutes to brown.
  • 13. Transfer roast to platter; tent with foil; let rest while making gravy.
  • 14. Gravy: Pour juices from pan into fat separator or skim fat from juice. (You should have about 1/2 cup juice.) Pour juice, from separator or skillet, into measuring cup or bowl; whisk in 1/4 cup all purpose flour until smooth.
  • 15. Pour into skillet, add 2 cups pork or chicken broth; stirring constantly, bring to boil over medium-high heat for 2 to 3 minutes.
  • 16. Stir in 1 teaspoon soy sauce, 1 teaspoon balsamic vinegar and salt and pepper to taste.
  • 17. When thickened to desired consistency, remove from heat, cover and keep warm until served.
  • 18. Cut and remove twine and rosemary branches from roast. Slice as desired.
  • 19. Serve with gravy. Garnish with rosemary stems or sprigs, if desired.
  • 20. Cover and refrigerate all leftovers.

1 pork loin roast, 3 to 5 lbs.
3 or 4 clove garlic, peeled and quartered pole to pole
3 to 5 sprig(s) fresh rosemary stems
olive oil, extra virgin

salt (sea, kosher or table variety)

Roast Chicken Pan Gravy image

Steps:

  • Pour fat from drippings into a bowl and reserve. Whisk flour into remaining drippings left in pan; mixture will seem dry. Add 2 tablespoons reserved fat, or as needed, to the drippings mixture to combine with flour.
  • Place pan of drippings mixture over low heat and toast flour until light brown and mixture gives off a nutty fragrance, about 5 minutes.
  • Drizzle about 1/3 cup cold chicken stock at a time into pan drippings, whisking each addition of stock into mixture until thoroughly combined. Continue whisking, scraping any browned pan drippings from the bottom of the pan into gravy; bring to a simmer. Continue to cook, whisking constantly, until gravy is thick and flour has combined with the liquid, 8 to 10 minutes.
  • Adjust thickness of gravy; if too thick, whisk in a little more stock. If gravy is too thin, continue to simmer, whisking constantly, until reduced and thickened, about 10 more minutes. For the smoothest texture, strain gravy before serving.

UNBELIEVABLY PRIMO PORK CHOPS AND GRAVY

Given to me by my best friend, Ronna, under threat of serious injury, this method, along with the use of boneless, thick-cut chops, qualify it as the best pork chop recipe I've ever had. No more dry, tough chops in MY house. Easily good enough for company. We always make it with Better Than Bouillon brand chicken stock concentrate, which is a paste in a jar, but you can use regular chicken stock/broth as well. Please read ingredient list carefully. It's *either* stock concentrate AND water or prepared stock and NO water.

Unbelievably Primo Pork Chops and Gravy image

Steps:

  • In a pot, warm the chicken broth (or chicken stock concentrate plus the 3 cups water) over medium heat.
  • Heat the oil on high. Trim the chops of excess fat and season with pepper.
  • Sear the pork chops in the (very) hot pan. Noisy work... a spatter guard helps here! Sear the chops on all sides including the edges (hold them with tongs edge-side-down). Put them on a plate, cover with foil and set aside.
  • Deglaze the pan with the vermouth or wine. Add the chicken stock from the pot, completing the deglazing. Now pour everything from the pan back into the pot. (Confused yet?).
  • Put the chops in the pot, reserving the foil that covered them. Check if the fluid level is high enough in the pot; it should be about 1/4 inch or less below the tops of the chops, but the chops should not be covered by the chicken stock.
  • Cover pot with lid. Let simmer on medium-low for 20 minutes. Flip the chops over and let simmer for another 20 minutes, checking every now and then to assure there's enough fluid left in the pot. If not, add a little more chicken stock.
  • Take the chops out of the pot and cover again with reserved foil. In a small bowl, mix the teaspoon of flour with a tablespoon of water until well-blended and whisk into the stock to thicken. Turn the heat to high and let cook, stirring occasionally, until the stock/gravy reduces slightly and thickens. This may take several minutes.
  • Plate the chops with mashed potatoes and introduce them both to that lucious gravy!

2 thick-cut boneless pork chops
2 teaspoons chicken bouillon concentrate (Better Than Bouillon brand) or 2 cups chicken stock
2 cups water (IMPORTANT! Use ONLY if making chicken stock from concentrate!)
1/2 cup vermouth or 1/2 cup dry white wine
1 teaspoon flour
1 tablespoon water
pepper, to taste
1 tablespoon vegetable oil (not olive oil, it burns at high heat)
