ROTISSERIE LEMON-ROSEMARY CHICKEN
From the Ultimate Rotisserie Cookbook by Diane Phillips. Tangy lemon and pungent rosemary give this chicken its robust flavor. Cooking time includes the 8 hour marinating time.

Steps:
- Wash chicken inside and out under cold water and pat dry.
- Remove any excess fat from the skin and put chicken in a 2-gallon zip top bag.
- Mix marinade ingredients and pour over chicken.
- Marinate in refrigerator about 8 hours.
- Remove chicken from marinade and drain.
- Load chicken onto spit rod assembly. Truss according to manufacturer's directions, or tie the legs together and tie another string around the body and wings so the wings don't flop around during cooking.
- Roast until an instant-read meat thermometer inserted into the thickest part of the thigh registers 175 degrees, about 20 minutes per pound.
- Remove chicken from spit, cover loosely with foil and let rest for about 10 minutes before carving.

- Preheat oven to 400°. Sprinkle chicken with salt and pepper. In a large cast-iron or other heavy skillet, heat oil over medium heat; brown chicken on both sides. Transfer to a 15x10x1-in. baking pan; reserve drippings. Bake chicken, uncovered, until a thermometer reads 165°, 8-10 minutes., Meanwhile, in same skillet, cook and stir shallot and rosemary in drippings until tender. Stir in broth. Bring to a boil; cook until liquid is reduced by half. Reduce heat to low; stir in lemon zest and juice. Whisk in butter, 1 tablespoon at a time, until creamy. Serve with chicken.

- Preheat oven to 450 degrees F (230 degrees C).
- Combine chicken, onion, lemon slices, garlic, and rosemary together in a large bowl. Drizzle olive oil and sprinkle salt and black pepper over the chicken mixture; toss to coat. Spread chicken mixture out in the bottom of a baking dish.

- Preheat the oven to 400 degrees F. Line a baking tray with foil.
- Place the softened butter in a bowl with the lemon zest. Strip the leaves from 1 sprig of rosemary, finely chop and add along with some salt and pepper. Mix everything together.
- Lay the chicken on the foil-lined baking tray, breast-side up. Use your fingers to smear the butter mixture all over the chicken, under the skin and inside the cavity.
- Squeeze the juice of 1 of the lemons over the chicken, and then place the 4 lemon halves (if they fit!) inside the cavity of the chicken along with the 3 whole remaining sprigs of rosemary.
- Put the chicken in the oven and roast it until done, about 1 hour 15 minutes. The skin should be deep golden brown and the juices should be sizzling.

- Make the dry brine by putting the the salt, rosemary, garlic, and lemon zest in a mortar and pestle or spice grinder, and grinding until it is a fine powder. It will be kind of wet – halfway between a paste and a powder. Rub a two-finger pinch of the dry brine (about 1/4 tsp) in the cavity of the bird. Next, loosen the skin from the breast meat by gently running a finger under the skin of each breast. I rub 1/4 tsp of the dry brine on the meat of the breast, working it under the skin. Then I rub the outside of the chicken with the rest of the brine, using about 1/2 tsp per “side”. I start with the breast, then I turn the chicken to one side (with the leg and wing facing up), then flip and do the other side. Finally, I salt the bottom (backbone) side of the chicken. Put 1/2 lemon in the cavity of the chicken. Repeat with the second chicken, then refrigerate overnight, or up to 3 days. If you are salting more than a day in advance, cover the chicken with plastic wrap, and remove the wrap
- One hour before cooking, remove the chicken from the refrigerator. Fold the wingtips back under the chicken, then truss the chicken tightly. (Again, see the basic technique for trussing details). Skewer the chicken on the spit – get it on there tight! I like to put one set of prongs under the breast of the first chicken, then the other skewer through the thighs. Then, I put the second bird on upside down compared to the first bird. This makes the whole spit more balanced, which eases the load on the rotisserie motor. Also, it looks cool that way.*
- Set the grill up for rotisserie cooking at high heat. For my Weber Summit, this means removing the grates, turning the two outer burners (burners 1 and 6) to high, and turning the infrared burner to high. Then I put my drip pan in the middle, over the unlit burners, and let the grill preheat for ten to fifteen minutes.

- Preheat the oven to 425°F and position a rack in the lower third of the oven. Mix the butter with minced rosemary, 3 cloves of minced garlic, lemon zest, salt and pepper.
- Pat the chicken dry and rub half of the butter, garlic and lemon zest mixture under the skin and the rest over the chicken and season with salt and pepper. Generously season cavity of chicken with salt and pepper and stuff with lemon half, ½ head of garlic, 2-3 quarters of onion and 2 rosemary sprigs. Truss legs with cooking twine and tuck wings under bird.
- Place chicken in a roasting pan breast-side-up with the remaining onion, garlic, lemons and herbs. Add ½ cup of white wine.
- Roast for 30 minutes or until the breast is firm and just beginning to brown in spots. Using tongs, turn the chicken breast-down, baste with juices and roast for 20 minutes longer, until the skin is lightly browned. Using tongs, turn the chicken breast-side-up and baste again. Add ½ cup of water if wine has evaporated. Roast for about 20 minutes longer, until an instant-read thermometer inserted in the inner thigh registers 155°F to 160°F and juices are running clear.
