MIDDLE EASTERN DIP
This is traditionally called hummus, and I can't get enough of it. You can serve this with pita bread triangles (I use Recipe #362708), but I actually like to use raw celery and carrot sticks.

- Place the garlic and kosher salt in the bowl of a food processor (a smaller one may work better here). Pulse a few times until the garlic looks minced, stopping to scrape down the sides. Add the lemon juice and pulse a few times to combine (again, scrape down the sides)
- While the food processor is running, drizzle the oil in ever so slowly (use the top opening of the processor to drizzle in the oil). After you've used about 1/4 cup or so, add in about 1 tablespoon of the ice water. Stop to scrape down the sides of the processor bowl.
- Keep the processor running and continue to slowly drizzle in the oil, adding a tablespoon of the ice water after every 1/4 cup of oil. Continue on with this process until you have used up the oil entirely. The garlic sauce has thickened and increased in volume (it should look smooth and fluffy). This should take somewhere around 10 minute or so.

- Brush the bell peppers with 1 tbsp of olive oil, and place in a lightly oiled oven-safe pan or cast-iron skillet. Roast the peppers in the 425 degrees F heated oven for 30 minutes or so, turning them over once or twice.
- Remove from the oven and place the peppers in a bowl. Cover with plastic wrap for a few minutes. This traps the steam from the roasted peppers, making them easy to peel. When cool enough to handle, simply peel the peppers, remove the seeds and slice the peppers into small strips.
- Now in the bowl of a large food processor, combine the roasted red pepper strips with 3 tbsp extra virgin olive oil, walnuts, tomato paste, bread crumbs, pomegranate molasses, Aleppo pepper, sugar, sumac, salt and cayenne. Blend into a smooth paste.

- Preheat the oven to 500°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
- Using a fork, prick each eggplant all over (spacing the pricks about 1-1/2 inches apart) to prevent them from bursting in the oven. Arrange the eggplant on the prepared baking sheet. Roast until very soft and wrinkled, turning every 15 minutes or so, 45 to 60 minutes. Let the eggplant cool on the baking sheet until cool enough to handle.
- Cut off the stem ends of the eggplants and then slit them open lengthwise, like a baked potato. Using a soup spoon, scoop out the soft flesh and transfer to a fine sieve set in the sink or a large bowl. Once all of the flesh is in the sieve, pick out any stray bits of skin and discard. Using the back of a soup spoon, press out as much liquid as possible (there will be a lot!).
- Transfer the strained eggplant flesh to the bowl of a food processor fitted with the steel blade. Add the lemon juice, garlic, tahini, salt, pepper, cumin, smoked paprika, and oil; process until the mixture has a coarse, choppy texture, five to ten 1-second pulses. Adjust the seasoning with salt, pepper, and more lemon juice, if necessary. Transfer the baba ganoush to a serving bowl, cover with plastic wrap, and refrigerate until ready to serve.
