RUSSIAN TEA (ALL NATURAL)

Remember Lara's little kitchen in the country town in Dr. Zhivago? I believe that this is how that kitchen must have smelled --spiced tea brewing in the warmth while the cold winds rage outside. Recipe from Whole Foods.

Russian Tea (All Natural) image

Steps:

  • Bring water, cinnamon stick and cloves to a boil in a medium saucepan; remove from heat and add tea.
  • Steep, covered, for 5 minutes. Strain and discard the tea leaves and whole spices.
  • In a small saucepan, heat orange juice, lemon juice, sugar and nutmeg. Warm until the sugar dissolves.
  • Add the juice mixture to the tea. Taste and add more sugar if desired.
  • Reheat (don't boil!) and serve.

2 tablespoons lemon juice
1/4 cup sugar, more to taste

Nothing powdered or instant here. Just pure natural flavors to sip on a cold winter day. Smells great while it's brewing too. Vitamin C never tasted so good!

Mom's Russian Tea image

Steps:

  • Bring 8 cups water to a boil in a large stockpot. Remove from heat. Add tea bags; steep, 5 to 7 minutes. Remove and discard tea bags and return pot to medium heat.
  • Bring 1 cup water to a boil in a separate pot. Add sugar; stir well until dissolved. Pour mixture into the stockpot with the tea. Add pineapple juice, orange juice concentrate, and lemon juice. Stir.
  • Put cloves in a tea ball and place into the stockpot with the tea-juice mixture. Cook for 10 minutes; do not boil. Turn heat down to very low; let simmer until flavors blend, 15 to 20 minutes more.

Steps:

  • Boil 2 quarts water in a pot. Remove from heat, add tea bags, and steep for 20 minutes. Remove and discard tea bags.
  • Combine remaining 2 quarts water, sugar, cinnamon stick, and cloves in a separate pot. Bring to a boil. Add the brewed tea, pineapple juice, orange juice, and lemon juice.

When I was growing up I always looked forward to the Russian Tea that my Aunt Dorothy made every Christmas Eve. As soon as the weather turned chilly, I would start longing for a hot, steamy cup. It wasn't unitl I was away at college that I finally thought to ask her for the recipe! I place the whole cloves into a tea ball strainer so they're easy to remove when the tea is ready.   • Place cloves and cinnamon stick on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string.
