SALISBURY MEATLOAF AND POTATOES

Steps:
- Put the potatoes in a medium saucepan and cover with cold water; season with salt. Bring to a boil and cook until tender, 25 minutes.
- Meanwhile, combine the ground meat, panko, egg, onion, thyme, Worcestershire sauce, 1 teaspoon salt and a few grinds of pepper in a bowl; mix with your hands. Form into four 1/2-inch-thick oval patties.
- Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the patties; cook until browned, 3 minutes per side. Scatter the carrots and celery around the patties; cook until they start softening, 3 minutes. Reduce the heat to medium. Add the broth, cover and simmer until the patties are cooked through, 5 minutes. Remove the patties and increase the heat to high. Cook until the broth is slightly reduced, 2 minutes, then add 1 tablespoon butter and swirl until melted.
- Drain the potatoes; mash with the half-and-half, the remaining 2 tablespoons butter, and salt and pepper to taste. Serve with the patties and vegetables.
SALISBURY GROUND PORK MEATLOAF WITH APPLE AND SAGE
Wiltshire is known for it's pork production. In North America you will see "salisbury steak" on menus in restaurants and diners. It's actually a form of Salisbury Ground Pork Meatloaf but in America it's made with ground beef. I found this recipe while searching for recipes for ZWT.

- Peel and core apple and cut as finely as possible. Peel and finely chop the onion (can use processor for both).
- In a large bowl place ground pork, apple, onion, breadcrumbs, sage, salt and pepper.
- Mix well.
- Add beaten eggs. Hand mix all toghether and shape into loaf. Place in pan.
- Bake for 1 1/2 hours at 350°F.
- Carefully drain off any fat.
- Serve in thick slices with mustard/cheese sauce.

- Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a bowl. Sprinkle about 1 tablespoon of the flour mixture over both sides of each pork chop.
- Heat olive oil in a large skillet over medium-high heat. Cook pork chops in hot oil until browned completely, 2 to 3 minutes more side. Remove pork chops to a platter.
- Cook and stir onion in the oil and drippings retained in the skillet until tender, about 3 minutes; add apple slices and continue cooking until the apple slices are tender, about 2 minutes. Pour apple juice over the onion and apple mixture; add brown sugar and remaining flour mixture and stir to dissolve.
- Return pork chops to the skillet. Bring the liquid to a boil, reduce heat to low, and cook at a simmer until the pork is no longer pink in the center, about 5 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

GRILLED PORK WITH APPLE & SAGE

- Heat grill to high. Grate the zest from half the lemon and squeeze the juice from both halves. Split the pork fillet down the centre, cutting almost all the way through, and open out like a book. Lift onto a baking tray and season with salt, pepper and the lemon zest. Sprinkle with 1 tbsp of the sage. Grill for 8-10 mins, turning once, until cooked through.
- Meanwhile, pour the lemon juice into a small pan. Add the apple to the pan with the remaining sage, sugar, salt and pepper. Bring to the boil, stirring, then simmer until soft, about 6 mins. Serve with your favourite green veg and potato wedges (recipe, top right).

- Soak cubed bread in enough water or milk to cover.
- When soft, squeeze out excess moisture.
- Mix the bread, pork, onion, sage, salt, and pepper.
- Mince mixture in a food processor.
- Lightly grease a loaf tin.
- Place mixture in tin, pressing down firmly and evenly.
- In a preheated 375F oven, bake 1 1/2- 2 hours.
- If top browns too quickly, slip aluminum foil over the tin.
- Let stand in the tin 10- 15 minutes, then turn onto a rack to cool completely.

This meatloaf always comes out moist and tasty, any leftovers can be served on a bun with sauce. It's a great alternative to regular meatloaf with a little bit of sweetness. You don't have to have the sauce with it, it's good on it's own.

- Preheat oven to 325°F.
- Combine apple, meat, onion, bread crumbs, egg, parsley and sage.
- Season with salt and pepper.
- Press into an 8" x 4" loaf pan or free-form into a loaf shape.
- Bake for 1 hour, drain off any melted fat.
- While meatloaf is baking, start onion gravy by cooking onions in the butter until carmalized, about 5 to 10 minutes, depending on how dark you like them.
- Stir in the flour, until it looks kind of like a paste.
- Add the rest of the ingredients, continually stirring.
- When meatloaf is ready, take it out of the oven and let it sit for approximately 10 minutes.
- Slice and serve with onion gravy.

- Preheat oven to 350 degrees.
- In a large bowl, combine beef, pork, beaten egg, minced onion, finely chopped apple, bread crumbs, salt and pepper. Blend together well w/ clean hands.
- Shape mixture into loaf and place in a baking dish.
- Mix together all the apple glaze ingredients in a seperate bowl and set aside.
- Bake meatloaf 350 degrees for 45 minutes. After 30 minutes, evenly pour the apple glaze over top of the meatloaf.
- Return to 350 degree oven and continue to cook for about another 45 minutes -- basting with your glaze every 15 minutes, or until done and no longer pink.

- In a medium bowel combine mushroom soup,onion soup,garlic and pepper set aside.
- In a large bowel mix together ground beef and 1/2 of your bread crumbs add 1/3 of soup mixture if it is to soft add the rest of your bread crumbs.
- Place in a baking dish and shape in to a loaf size.Place in a 350 degree oven and cook of 30mins. After 30mins remove fat from pan and top with the reaming soup mixture cook for 10 more minutes.
