Steps:

  • Combine all ingredients in a shallow pan.
  • Marinate for 30 minutes.
  • Grill for 20 minutes, basting occasionally.
  • Alternately, bake at 400 for 20 minutes or until it flakes easily when tested.

2 tablespoons soy sauce
2 tablespoons canola oil
1 tablespoon lemon juice
1 teaspoon hot pepper sauce, I reccomend Tobasco
1 garlic clove, minced
1 1/2 lbs salmon fillets, unskinned

SALMON/HALIBUT OLYMPIA

I got this recipe from a place I stayed in Alaska quite a few years ago. The chef was accommodating in giving it to me, but as you can see - no measurements. You get to "guess-and-by-gosh" it, or adjust for taste. Hope you enjoy it.

Salmon/Halibut Olympia image

Steps:

  • Grease baking pan.
  • Layer fish with onions and sliced tomatoes.
  • Spread sauce over top of fish (cover thoroughly).
  • Cover with foil.
  • Bake 1/2 hour or so at 350 (until the contents simmer).
  • Sprinkle mozzarella on top.
  • Broil until cheese melts.

mayonnaise (equal parts mayo and sour cream)
sour cream
salt
pepper (I use basil or dill)
1 tablespoon Worcestershire sauce
sliced onion, as much as you like

Charlie Trotter's Salmon with Olympia Oysters, Hijiki Seaweed, and Ginger-Shiso-Mirin Broth image

Steps:

  • Soak the hijiki seaweed in cold water for 20 minutes. Drain and set aside. In a saute pan, heat the oil. Slit the skin on the top of the salmon to prevent the salmon from buckling. Season the salmon with salt and white pepper. When the pan is smoking hot, saute the salmon for 1 1/2 minutes. Turn and continue cooking for 35 seconds. Remove from the pan. In the same pan, melt 1 tablespoon of butter, add the leeks, and then reduce the heat. Simmer the leeks for 2 minutes. Add the preserved ginger and deglaze with rice vinegar. Add the mirin and fish stock, bring to a boil, and remove from the heat. Stir in the hijiki seaweed and the oysters, and allow the oysters to warm through. Add the shiso, whisk in the remaining butter and season with salt and white pepper. To assemble, spoon the oysters and leeks evenly into a shallow bowl. Place the salmon on top and spoon in the broth.

1 tablespoon dried hijiki seaweed
2 teaspoon grapeseed oil
4 (2 ounces) salmon pieces, skin on
Salt and pepper
2 tablespoons butter
1/2 cup leeks, cut into rings
1 tablespoon preserved ginger
1 tablespoon rice vinegar
3 tablespoons mirin
2/3 cup fish stock
28 Olympia oysters
1 tablespoon shiso

HALIBUT OLYMPIA

We liked this recipe so much we had the caterer use it at our wedding. All the guests raved about how it was the best halibut they had ever had. It also helps to have fresh halibut.

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter; pour into bottom of 13X9-inch baking pan.
  • Spread onion over melted butter and top with halibut fillets.
  • Mix together sour cream and mayonnaise; spread over halibut.
  • Top with cracker crumbs.
  • Bake in oven until fish flakes and crumbs are lightly browned (about 20 minutes.).
  • *Note* If you can't get your hands on fresh halibut, I've learned to cut all the brown parts off the halibut and then soak it in about 1/2 gallon of water with 1/4 cup lemon juice for about an hour. This usually takes out the fishy taste.

2 lbs fresh halibut fillets (or thawed frozen)
1 1/2 cups sour cream
1 1/2 cups mayonnaise
1 cup cracker, crushed (I use Ritz)

  • Preheat oven to 400 degrees F. Place fish in a small baking dish.
  • In a small bowl, combine remaining ingredients.
  • Spoon mixture over fish and bake 12 - 15 minutes until fish flakes.

Creamy Halibut Olympia image

Steps:

  • Season halibut fillets with salt and pepper.
  • Melt butter in a skillet over medium heat; add onion. Cook and stir until translucent, about 5 minutes. Add wine; simmer until slightly reduced but still juicy, about 5 minutes. Pour mixture into the bottom of a baking pan. Place seasoned halibut on top.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine sour cream, mayonnaise, garlic, seafood seasoning, white pepper, paprika, and dill in a bowl. Season with salt. Pour on top of halibut. Sprinkle green onions, panko, and capers on top.
  • Bake in the preheated oven until the fish flakes easily with a fork, about 15 minutes.
