- Pour all spices into a bowl and mix together.
- Preheat saute pan and coat with olive oil.
- Rinse turkey chops.
- Season with seasoning mixture.
- Place chops into hot pan with olive oil.
- Sear for 4 minutes on each side or until golden brown.
- Remove chops from pan. Lay on paper towel to soak up excess oil.

TURKEY CHOPS WITH ROSEMARY POTATOES & CREAMY MUSHROOM SAUCE
Very simple meal I discovered in the local newspaper 'Simply Food' section by Kate Murdoch (2nd April 08 - Courier Mail www.newsspace.com.au) that I modified slightly due to my non-steak eating habits.

Steps:
- Heat 1 tablespoon of olive oil in a large non-stick frying pan over medium-high heat. Add mushrooms and cook for 5 minutes or until golden and softened. Remove from pan and set aside.
- Add the stock, red wine and low-fat cream to the pan and simmer for 3 minutes or until thickened and reduced slightly. Season with salt and cracked black pepper. Remove from heat and cover.
- Heat 1 tablespoon of olive oil in a large non-stick frying pan and add the steamed potatoes and rosemary. Cook for 5 minutes or until potato is golden and crispy.
- Meanwhile, heat a stovetop grill on high. Cook the turkey chops for 4 minutes each side for medium or until cooked to your liking. Remove from heat, cover and set aside to rest for a few minutes.
- Return the sauce to the heat, add the mushrooms and stir until warmed through.
- Divide the turkey chops among serving plates and top with the mushroom sauce. Serve with potatoes.

GLAZED TURKEY CHOPS

- For the chops, in deep glass dish large enough to hold all the chops, combine all ingredients but the chops and oil. Add 6 cups boiling water, mix well, and cool.
- Add chops to cooled brine, cover, and refrigerate for 48 hours.
- For the glaze, combine all ingredients but butter in saucepan, and bring to boil over medium-high heat. Cook until mixture reduces to almost a syrupy consistency, for 20 to 25 minutes. Set aside.
- Prepare grill, indoors or out. Remove chops from brine; dry with paper towels.
- Bring brine to boil in saucepan; set aside.
- Brush chops generously with oil. Sear on both sides on grill, and then cook away from hottest part of grill, turning to cook both sides. Brush chops often with brine to keep moist. Cook for 15 to 20 minutes, or until all the pink is gone.
- Just before the chops are cooked, warm the glaze slightly; whisk in the butter. Brush over the chops; serve with cranberry relish or compote.
DELI-STYLE ROAST TURKEY FOR SANDWICHES
I'm excited to be sharing just how simple and easy it is to roast and slice your own turkey breast for sandwiches, which might not seem like something worth doing-until you actually do it. And no, enjoying fresh turkey sandwiches once a year after Thanksgiving is not enough.

- Preheat the oven to 450 degrees (230 degrees C).
- Pat turkey breast with a paper towel to remove any excess liquid and place into a baking dish just big enough to fit it. Use the tip of a sharp small knife to poke the skin of the turkey breast all over. Drizzle over olive oil and use tongs to rub; flip turkey breast over a few times, or until all surfaces are coated with the oil. You can also use a brush. Set aside for 15 to 20 minutes.
- While turkey rests, mix salt, pepper, thyme, rosemary, oregano, and paprika together in a small bowl until thoroughly combined.
- Use tongs to grab the turkey breast with one hand while using your other hand to sprinkle the spice rub evenly over the entire surface, including the sides. Finish with the skin side facing up.
- Add about 1/2 inch of water to the bottom of the baking dish.
- Place prepared turkey breast into the center of the oven. Immediately lower the heat to 300 degrees F (150 degrees C). Roast until a probe thermometer stuck into center of the thickest part of the breast reads 150 degrees F (65 degrees C), about 1 hour and 15 minutes.
- Let cool before wrapping. Chill thoroughly in the refrigerator, about 8 hours, or overnight. Once meat is cold, slice thinly and serve.

ROASTED TURKEY STOCK
When you're making a turkey, making stock with the bones is the logical next step. This recipe, from the Los Angeles chef Suzanne Goin, has the usual aromatics - carrots, celery, onions - plus a concentrated shot of white wine and a dried chile, which add a welcome breath of freshness. (Sometimes poultry stock can taste flat.) Roasting the bones and the vegetables in the same pan streamlines the process and adds depth of flavor. You can use this stock in virtually any recipe that calls for chicken stock (except for chicken soup).

- Heat oven to 450 degrees. Using a sturdy knife or your hands, cut or tear turkey carcass into large pieces. Arrange in a single layer in a roasting pan and roast until brown and sizzling, 20 to 25 minutes.
- Remove from oven and transfer pieces to a stockpot.
- Add onions, carrots and celery to the empty roasting pan and place over medium heat. Sauté briefly, just to loosen the crusty turkey bits from bottom of pan.
- Return pan to oven and cook until vegetables are browned around the edges, 20 to 25 minutes.
- Remove pan from oven and place it over medium heat. Add white wine and cook, stirring, until wine is reduced to a syrup, about 3 minutes.
- Add wine-vegetable mixture to stockpot. Add garlic, thyme, bay leaves, black peppercorns and chile. Add 6 quarts water and place over medium-high heat just until mixture comes to a boil.
- Immediately reduce heat to low, skim any foam floating on top and simmer, skimming as needed, for 3 hours. Add 1 teaspoon salt and taste. If stock tastes watery, keep simmering until stock is flavorful. Taste for salt again and add more if needed.
- Strain stock through a sieve into a large container or containers. Discard solids. Let stock cool slightly, then refrigerate. Skim off any fat from the top of the stock. Use within 4 days or freeze.

SATAY BEEF AND NOODLE SOUP
An easy, non-traditional, satay version, of a favorite Vietnamese soup. If you prefer, use strips of sauteed chicken and chicken stock, instead of the fillet steak and beef stock in this recipe.

- Heat oil in a deep pan or skillet and lightly saute the ginger and garlic for 1 minute.
- Add the beef stock, nuoc nam, lemon grass, spring onions, cinnamon and star anise.
- Bring to the boil and simmer, covered, for 30 minutes, then strain and return stock to pan.
- Stock can be prepared to this stage, 3 days ahead.
- On the day of serving, prepare the ingredients for the garnishes and place in small serving bowls.
- Around 20 minutes before serving, place the noodles in a heatproof bowl, cover with boiling water and soak until noodles are soft (about 20 minutes), then drain well.
- When ready to serve, bring the stock to the boil and add the satay sauce, and Sriracha chili sauce or sambal oelek, if desired.
- Taste and correct seasoning, adding a touch more satay sauce and chili sauce if desired.
- Divide the hot rice stick noodles between 4 to 6 deep soup bowls, and top with sliced, raw, beef fillet.
- Ladle over enough boiling stock to cover the noodles and meat.
- Whether the beef is rare or well done is determined by how long the beef sits in the hot broth before serving.
- Each person tops their portion with their choice of garnishes, a squeeze of lime juice and Sriracha sauce if desired.

AUTUMN TURKEY CHOPS
Today was a cold, rainy late October day. I bought a few mini pumpkins and gourds and things to decorate my house with and was feeling 'autumn inspired'. Longing for the flavors of fall, I wanted something with cinnamon, nutmeg and maybe even cloves. I had some turkey 'chops' and decided to throw these things together. I have nothing for leftovers now! The whole family loved it! (Even the super picky 3 and 5 year old!)

- Mix dry seasoning in a small bowl and blend well.
- Slice apples and arrange in a 9x13 casserole dish. I alternated the types in the pan and included a photo to illustrate. I used a Gala and Granny Smith apple, but I'm not sure how much the kind of apple matters.
- Lay chops on top of apples. Dust evenly w/ seasoning until all gone.
- Top w/ butter to taste and sprinkle Bragg's Liquid Amino Acids over the top.
- Cover with foil and bake at 350°F for 30-40 minutes.
- P.S. The leftover apples doubled as dessert for my kids!
