Steps:
- In a glass bowl or dish, mix together the salt, pepper, coriander, cumin seed, and vegetable oil. Add pork cubes, and stir to coat. Let stand for 20 minutes. Add onion, brown sugar, soy sauce, and ginger; stir to blend. Cover and refrigerate for at least one hour, but best overnight.
- Preheat an outdoor grill for high heat, and lightly oil the grate. Thread pork cubes onto skewers.
- Cook pork on the grill, basting frequently with the remaining marinade. Turn occasionally until cooked through, about 15 minutes. Serve sprinkled with lime juice to taste. Discard any unused marinade.

- In a small bowl, combine the first 7 ingredients. Set aside 1/4 cup for dipping sauce. Pour remaining sauce into a bowl or shallow dish; add the pork and turn to coat. - In a small saucepan, bring the first eight ingredients to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until thickened. - Combine all ingredients in a medium bowl, add pork and let marinate 2 to 4 hours.
- Heat the oil in a skillet and add the onion, garlic and chili. Saute for about 4 minutes. Stir in the soy sauce, lime juice, coconut milk, coriander, and cumin. Thoroughly blend the peanut butter into the mixture. Bring the sauce to a simmer over low heat, stirring frequently. Stir in the cilantro and remove from the heat.
- Preheat the grill.
- Remove the pork from the marinade and thread on skewers. Grill for 7 to 8 minutes or until cooked through. Serve with the sauce.

- 1. Thread the pork onto the skewers, 5 to 6 pieces per skewer. Combine 1/3 cup of the soy sauce, the garlic, and shallots in a plate and roll the satés around in the mixture. Cover and let marinate, in the refrigerator, for 1 hour, turning the skewers occasionally to ensure even marinating.2. Preheat the grill to high.3. Meanwhile, set out 4 dinner plates. On one side of each plate place a mound of diced cucumbers, a small pool of the remaining soy sauce, a small pile of the galangal powder, and a few lime wedges.4. When ready to cook, oil the grill grate. Arrange the satés on the hot grate and grill, turning with tongs, until the meat is nicely browned and cooked through, about 8 minutes in all.5. PORK SATE WITH PEANUT DIPPING SAUCE

- Mix 1 tablespoon lemongrass, 1 tablespoon lime juice, 1 tablespoon sugar, soy sauce and garlic in large bowl. Add pork; toss to coat with marinade. Let stand 30 minutes to 1 hour.
- Meanwhile, mix remaining 1/3 cup lemongrass, remaining 2 tablespoons lime juice, remaining 1 tablespoon sugar, 1 cup broth, peanut butter, onion, coriander and jalapeño in heavy medium saucepan. Bring to boil, whisking frequently. Transfer mixture to blender and puree. Strain into heavy small saucepan, pressing on solids with back of spoon; discard solids. Simmer until reduced to thick sauce consistency, stirring frequently, about 6 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Reheat before using, thinning with more chicken broth if necessary.)
- Preheat broiler. Thread 3 pork strips on each skewer. Broil until cooked through, about 3 minutes per side. Pour sauce into bowl; set in center of platter. Sprinkle with green onion. Surround with pork skewers and serve.
SATE BABE (PORK SATE)
This is a little different than some pork sates in that it does not have a peanut sauce. I made this for the appy party/Toolbelt birthday Party that Country Lady hosted, People said they liked it, maybe they were just being nice, but it does have a very nice flavour, and it is easy, so that always works for me. Oh yeah, I got this recipe off of recipe source, so yeah, I stole it, changed it slightly, but essentially it is the same.
