CROCK POT SAUSAGE & PEPPER MEDLEY
This is a very easy recipe I found and tastes yummy! I serve it with french bread, or rice to soak up the juices. Enjoy!

Steps:
- Place onions and peppers, then sausage in crock pot. Pour the stewed tomatoes on top of the sausage, then the spaghetti sauce. Sometimes I add a touch of water to make more sauce.
- Cook in crock pot for 6-8 hours on low, 3-4 hours on high.

SAUSAGE AND PEPPERS
Steps:
- Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
- Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

Stir pineapple into sausage mixture. Bring to a boil; cook, uncovered, for 5 minutes., Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

This is a great recipe for anyone who loves bell peppers! My dad always made this for me when I was growing up... now I make it for my own family and get raves every time! Serve over pasta and with bruschetta for a full meal! Enjoy!

- Slice each sausage link into 5 pieces. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sausage, and cook until browned, turning as needed.
- Drain excess grease, then add the green, red and yellow peppers, tomatoes, and Italian seasoning. Drizzle the remaining olive oil over all, and reduce the heat to medium-low. Cover, and let simmer for 15 minutes.
- Remove the lid, and stir. Add the garlic and onion to the pan. Sprinkle with Parmesan cheese. Cover, and simmer for 15 more minutes. Stir, then top with mozzarella cheese. Cover and cook for 5 minutes to melt the cheese. Remove from the heat and enjoy.

I am making this for our family holiday celebration pot luck this year. I cut the sausages into 1" bite size pieces and the peppers and onions into 2"x 1/2" slices to make it easy to eat with a fork! you can use any of your favorite sausages and/or peppers you choose!

Steps:
- cut sausages into 1" bite sized rounds.
- Cut peppers and onions into 2"x1/2" slices.
- combined all spices into 1 bowl and mix well.
- heat large skillet with oil to medium heat.
- cook all sausages until 90% done (20 mins).
- add peppers and onions and mixed spices to pan.
- continue cooking for 5 to 10 minutes until peppers and onions are just done, do not over cook.
- serve on you favorite platter with a side of red pasta sauce if you wish!

- 1. Heat the olive oil over medium heat in a large pan that has a lid. When the oil is hot, add the sausages and brown them.You want a gentle browning, not a sear. Cook for several minutes, turning them occasionally so they brown on all sides. When the sausages are browned, remove from the pan and set aside. Increase the heat to high and add the onions and peppers. Toss so they get coated with the oil in the pan stirring every so often. You want some blackening. Once the onions and peppers soften, sprinkle some salt on them. Once you get some searing on the onions and peppers, add the garlic and cook for 1 more minute. Add the red wine or broth,scrape the bottom of the pan to release all the browned and blackened bits. Let the wine cook down by half. Add the tomatoes, oregano and red pepper flakes (if using) and stir well to combine. Add the sausages back in. Bring to a simmer then reduce the heat to low. Cover and simmer until the peppers are soft the sausages are cooked through, about 20 minutes. Serve over soft polenta,in a bun or over pasta.
