EASTER PIZZA PIENA PIE

Steps:
- Preheat oven to 375 degrees.
- On a lightly floured work surface, roll out larger disk of dough into an 1/8-inch thick rectangle about 19 by 15 inches. Fit into a 13-by-9-inch baking dish leaving a 1-inch overhang; set aside.
- Roll out second smaller disk of dough to about 1/8 inch thick and cut four 15-by-1-inch strips; set aside. Cut remaining dough into three 11-by-1-inch strips; set aside.
- Place eggs and ricotta in the bowl of an electric mixer fitted with the paddle attachment; mix until well combined. Add sausage, parmesan, mozzarella, pepper, and parsley; continue mixing until well combined. Pour mixture over dough in baking dish.
- With the long end of the baking dish facing you, place the three 11-inch strips of dough vertically over the top of the filling, spacing evenly apart. Starting in the middle, weave one of the 15-inch strips over and under the vertical strips (folding back every other vertical strip makes this easier). Continue weaving the remaining three 15-inch strips until lattice is complete. Fold over the overhanging pieces of dough and press with a fork to seal.
- Brush dough with egg yolk and transfer to oven. Bake until golden brown, about 1 hour and 10 minutes. Serve warm.

- Divide dough in half. With greased fingers, pat each half onto an ungreased 12-in. pizza pan. Prick dough thoroughly with a fork. Bake at 400° until lightly browned, 10-12 minutes. Meanwhile, in a large skillet, cook the sausage over medium heat until no longer pink; drain., Spread pizza sauce over crusts. Top with cheese, onion, green pepper, mushrooms and sausage. Bake at 400° until golden brown and cheese is bubbling, 12-15 minutes. If desired, top with grated Parmesan cheese, crushed red pepper flakes and fresh oregano leaves. , Freeze option: Wrap unbaked pizzas and freeze for up to 2 months. To use, unwrap and place on pizza pans; thaw in the refrigerator. Bake at 400° until crust is golden brown, 18-22 minutes.

This is a fun recipe because you can use your own favorite pizza dough, or pick up a frozen loaf of bread dough at the market. You can either use ground beef or chicken or Italian sausage. You can use your own favorite bread recipe. The choices are yours!

Steps:
- Heat oil in large nonstick skillet.
- Add onions and bell peppers; cook 5 minute or until tender.
- Add sausage and marjoram.
- Cook and stir 5 minute or until meat is no longer pink.
- Drain well, cool.
- Preheat oven to 375°F Cut dough in half.
- Roll half of dough into 14X10" rectangle on lightly floured board.(Let dough rest 5 minute if dough springs back when rolling).
- Pat onto bottom and 1" up the sides of greased 13x9x2" baking pan.
- Roll out remaining half of dough to 13x9x2"
- rectangle; keep covered.
- Stir cheese, eggs and RedHot® sauce into sausage mixture; toss to coat evenly.
- Spoon evenly over bottom dough.
- Cover sausage mixture with top half of dough.
- Pinch top and bottom edges of dough to seal.
- Brush top lightly with milk.
- Sprinkle with Parmesan and sesame seeds.
- Bake 25 minute or until golden and bread sounds hollow when tapped.
- Let stand 10 minutes.
- Cut into squares to serve.

STICKY ONION & SAUSAGE PIZZA
Use ciabatta bread mix as an easy homemade pizza dough - top with balsamic onions, spinach and sausage meat for a quick weeknight dinner

- Tip the bread mix into a large bowl. Make a well in the centre and pour in 1 tbsp olive oil and 350ml tepid water. Mix to form a dough, then turn out onto a lightly floured surface and knead for 5 mins. Transfer to a lightly oiled bowl, cover and leave to rise for 30 mins.
- To make the topping, heat the remaining oil in a frying pan and add the onions, rosemary and a good pinch of salt. Cook gently, stirring occasionally, for 25-30 mins until starting to caramelise. Boil the kettle. Put the spinach in a colander and pour over the boiling water. Leave to drain and cool, then squeeze as much liquid from the spinach as you can and season. Squeeze the sausages from their skins into a small bowl and stir through the mustard. When the onions are softened, pour over the balsamic vinegar and stir well. Cook until almost all the vinegar has evaporated and the onions are sticky.
- Heat oven to 220C/200C fan/gas 7 and pop in 2 baking trays. Tip the dough out and divide into 2 equal pieces - do not knock the dough back or it won't hold its shape. Stretch and roll the dough into 2 large circles, about 30cm diameter. Transfer the bases to the trays. Spread over the onions, top with the spinach and cheddar, then dot over the mustardy sausage. Bake for 15-20 mins until crisp, golden and the cheese is bubbling.
