DATE-NUT BALLS
This is one of my very favorite treats to make for the holidays and package up along with some fudge, pecan tarts, and pecan tasties, to give to the neighbors. This way my husband and I can have a few too.

Steps:
- Melt butter in a saucepan over medium heat; cook and stir dates and white sugar in the melted butter until thick and golden brown, 10 to 15 minutes. Remove saucepan from heat and stir in crispy rice cereal and pecans. Let mixture cool until easily handled, 5 to 10 minutes.
- Form mixture into small balls using your hands.
- Pour confectioners' sugar into a resealable bag; add date-nut balls and lightly shake bag until balls are coated.

MY GRANDMOTHER'S DATE NUT ROLL

- 1. Chop dates. (Do not buy or use dates that are already chopped.)
- 2. Combine sugar, milk, and dates in a large saucepan. Cook over medium heat, stirring constantly until mixture reaches soft ball 234 degrees.
- 3. Remove from heat. Stir in butter and nuts. Stir until candy starts to thicken. Divide candy in half, by shaping it into logs on two damp tea towels. roll and shape into 10"X2" logs. Let cool. Slice to serve.
MOM'S DATE NUT BARS
These are the bars that I like the best they are so moist and so easy to make - this recipe is often doubled during the holiday as they taste so good and go fast off the cookie and bar tray.

Steps:
- 1. Butter or spray a 13x9-inch baking pan;set aside. Heat oven to 350^.
- 2. Beat eggs until foamy and then beat in granulated sugar in gradually. Stir dry ingredients together. Add dates and nuts to flour mixture, then stir into egg mixture.
- 3. Spread mixture(which is thick) into the prepared pan. Bake until firm and delicately brown, bake about 25-30 minutes, so they do not get dry. When just a tad warm and not hot cut into long finger shape bars and roll in powdered sugar.;or place some powdered sugar in a small bag and add a piece or 2 and gently shake to coat evenly, shake off any excess.
DATE NUT BALLS
A friend gave me this recipe more than 30 years ago. It is my husband's favorite treat. I like these with pecans or walnuts. If you do not like nuts, omit the nuts and use 3 cups Rice Krispies. -Melinda Lord, Washington, Iowa

- In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. Stir in vanilla. Pour over Rice Krispies mixture; stir to coat. When cool enough to handle, press into 1-1/4-in. balls. Cool. If desired, roll in confectioner's sugar. Store in an airtight container at room temperature.

Even though my two grown sons aren't big "sweets eaters", they think these candies are exceptional. The big peanut butter flavor is a hit combined with holiday staples like walnuts and dates.

CHRISTMAS DATE NUT CANDY
This came from a family member, and although it is time consuming and requires lengthy and difficult stirring, it is well worth the effort! - 1. Bring Sugar, Butter and Milk to rolling/bubbling boil.
- 2. Add dates, crushing against sides of pan (Tough!)
- 3. Cook to Soft Ball stage. (Drop tiny bit in glass of cold water. When forms a soft ball - NOT hard - Remove from heat and BEAT until thick and pour-able.
- 4. Work fast here. Pour a long roll onto wet towel near long side, leaving space at each end. Fold ends in, and roll to other side. Put each roll in freezer
- 5. Slice frozen (or close to it), and serve.
