SAUSAGE AND HERB STUFFING
Ina Garten's Sausage and Herb Stuffing recipe from Barefoot Contessa on Food Network features spicy Italian sausage, apples and dried cranberries.

- Preheat the oven to 300 degrees F.
- Place the bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temperature to 350 degrees F. Remove the bread cubes to a very large bowl.
- Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 minutes, until the vegetables are softened. Add to the bread cubes.
- In the same saute pan, cook the sausage over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables.
- Add the chicken stock and cranberries to the mixture, mix well, and pour into a 9 by 12-inch baking dish. Bake for 30 minutes, until browned on top and hot in the middle. Serve warm.
BEST SAUSAGE STUFFING
This stuffing has lots of flavor and is nice and moist. You can also change the ingredients to your liking. I quadruple this recipe and make the extra in my electric roaster, that's how much everyone loves it. This recipe is very adaptable, you can change it around anyway you like and it will still be delicious!

Steps:
- Place sausage in a large, deep skillet; cook over medium-high heat until evenly brown, about 10 minutes. Remove sausage from the skillet and let drain on paper towels. Combine melted margarine with the sausage drippings until there is 1 cup of drippings and margarine combined.
- Cook and stir onion and celery in the margarine-dripping mixture in the same skillet over medium heat until onion is tender but not browned, about 10 minutes . Stir in about 1/3 of the bread cubes. Pour onion mixture into a large bowl and stir in remaining bread cubes, sausage, poultry seasoning, and pepper. Watch your hands, it's hot. Mix well. This stuffing is ready for baking.

After sampling a friend's turkey dressing one Thanksgiving, I was inspired to add apples, raisins and sage to my own stuffing recipe.

- In a small skillet, saute onion and celery in butter until tender. Add the apple, raisins, bouillon, salt, sage, poultry seasoning and pepper. Cook and stir 1-2 minutes longer. Stir in broth. Pour over bread crumbs; toss to coat., Transfer to a greased 1-qt. baking dish. Cover and bake at 350° for 25 minutes. Uncover; bake 20-25 minutes longer or until golden brown.

SAUSAGE, APPLE, AND WALNUT STUFFING

- Coat a large saute pan, over medium heat, with olive oil and add the onions and celery. Season with salt and cook until the veggies start to become soft and are very aromatic. Add the garlic and cook for another 1 to 2 minutes. Add the sausage and cook until the sausage browns. Stir in the apples and apple cider and cook until the apples start to soften, about 3 to 4 minutes. Sprinkle in the sage leaves and the walnuts and turn off the heat.
- Preheat the oven to 350 degrees F.
- Add the diced bread and toss together. Pour in the chicken stock and knead with your hands until the bread is very moist, actually wet. Taste to check for seasoning and season with salt, if needed, (it does). Transfer to a large deep ovenproof dish (roughly 9 by 11 inches) and bake until it is hot all the way through and crusty on top.
- Remove from the oven and serve.
- MMMMM...stuffing!
APPLE-RAISIN STUFFING

- In a large deep skillet, saute 2 chopped red onions, 2 minced garlic cloves and 3 chopped celery stalks in 1 stick butter for 1 minute.
- Season with salt and pepper and add 4 diced peeled apples, 1 tablespoon chopped thyme, 1 teaspoon aniseed and 1 cup golden raisins; cook 5 minutes.
- Pour in 4 go 6 cups chicken broth. Simmer until step 5.
- In a large bowl, mix 3 eggs, a scoop of grainy mustard and 3 tablespoons each chopped parsley and tarragon.
- Add to the bowl 8 cups each toasted pumpernickel and sourdough bread cubes and the hot broth mixture.
- Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.
ELEGANT TURKEY STUFFING
The distinctiveness of this turkey dressing comes from the orange-flavored liqueur, spicy Italian sausage, apples, and pecans. It's also very easy to prepare. This recipe makes enough to stuff one 18 to 20 pound bird. If you prefer, this dressing can be made with thyme instead of sage.

- Place the raisins in a small saucepan, and cover with 1 cup of liqueur. Bring to boil, remove from heat, and set aside.
- In a large skillet, melt 1/2 cup butter over medium heat. Saute the celery and onion in the butter for 10 minutes. Transfer to a large mixing bowl.

- In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking it into crumbles; drain. MY FAVORITE SAUSAGE DRESSING
I visited some friends in Idaho one Thanksgiving and helped make the dressing in the kitchen. I was so impressed with the outcome I asked for their recipe and wrote it down. - 1. put the bread crumbs in a large roasting pan with lid & sprinkle with additional dried herbs
- 2. pour the chicken broth and melted butter over and mix till evenly moist -- you may not need all the broth -- don't use too much or it gets mushy -- just make sure it is wet without being soggy
- 3. add the celery, onion, cooked sausage, cranberries, raisins, and pecans
- 4. stir until well mixed (I like to mix between each addition)
- 5. Cover and Bake at 350 for about 1 hour or until done in the center -- like a cake or at 400 for 30-35 minutes)
- 6. Can be baked in covered roaster or (after mixed) transfer to two smaller covered casserole dishes. (Both baked at same time, or bake one now and one tomorrow -- store in refrigerator over night -- the sausage is cooked so should cause no problem.)(You may also stuff the turkey with this mixture and bake the leftovers in a separate covered dish.)
- 7. If you use a cooking bag (follow bag directions) to roast the turkey, add a few medium sized red potatoes, large carrots, and small whole onions to the bottom of the bag around the turkey. People love these roasted vegetables -- and you will have excellent broth for gravy.
NANAS CELERY, RAISIN & SAUSAGE STUFFING

- Put stuffing mix in a large mixing bowl. Cook sausage (or bacon) in a 12-inch heavy skillet over moderate heat, stirring occasionally, until browned, 12 to 15 minutes. Add butter and heat until melted, and then add celery, mushrooms and onions and cook, stirring occasionally, until softened, about 12 minutes. Stir in seasoning and pepper and cook 1 minute. Add sausage mixture along with raisins (or stewed prunes) to bowl containing bread stuffing. Whisk together chicken stock and eggs in a separate bowl, then stir into bread stuffing mixture until combined well. Transfer to baking dish (stuffing will mound above dish). Baking dish version: Bake, loosely covered with a buttered sheet of foil (buttered side down) 30 minutes, then remove foil and bake until top is browned, 10 to 15 minutes more. Inside the turkey: Or the stuffing can be place inside a 12 pound turkey. Any extra stuffing that does not fit in turkey can be cooked in a baking dish.
