SAVORY DELICATA SQUASH RINGS

I find that some squash are so hard to peel, but this recipe dispenses with that step. Just cook the rings with the peel on. It's quite soft once cooked. :)

Steps:

  • Preheat oven to 400'F.
  • Cut the ends off the squash. Then, using a fillet knife clean out the insides of the squash, remove the stringy parts and the seeds. Then cut them into 1/2" pieces. Try to be consistent. The rings will cook much better if they are the same size.
  • If all the insides don't come out when you're using the knife you can clean the rest out once they are cut in rings.
  • Put the rings in a large bowl and pour a good portion of olive oil on them, toss to coat. Add the salt, pepper, shallot and thyme and toss again.
  • Get yourself a large oven tray with sides and oil it using one of the squash rings, this works really good. Use the oil from the bowl, then put the rings on on the tray in one layer.
  • Put in the preheated oven and bake for 20-25 minutes. If you want, flip the rings over 1/2 way through the cooking process to ensure even browing. Serve along with rice or meat.
  • Enjoy!

2 medium delicata squash

3 large shallots, minced and mixed with light oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Trim both ends from squash. Slice crosswise into 1/8-inch-thick rings, keeping seeds as intact as possible. Arrange rings (with seeds) in a single layer on the prepared baking sheet. Coat with cooking spray. Sprinkle with cumin, coriander, and black pepper.
  • Roast in the preheated oven for 20 minutes. Flip rings; continue baking until tender and browned, about 20 minutes more. Sprinkle with flaky salt and garnish with sage leaves.

  • Working one at a time, dip the squash rings into the flour mixture, then into the eggs (letting any excess drip off) and then into the bread crumbs, turning and pressing gently to help them adhere. Bake until tender, 18 to 20 minutes.
