CANDI'S DILL RYE BREAD

This was a test run in the kitchen today and boy oh boy did it turn out amazing! Very proud of this loaf! After it was done and I could actually jump for joy, I did! Very Very delish bread!

Steps:

  • 1. Sift all dry ingredients (except yeast, dill seed and sesame seed) into large bowl.
  • 2. Bring about 2 cups of water to a boil in a small pot with dill seed and sesame seeds in it. Turn heat off once it starts boiling.pour 1 1/3 cup water into measuring cup strain out rest of seed and add to water (pictured) set aside to cool a bit so not to kill yeast. (reserve remaining dill water)
  • 3. Once cooled add butter to melt, once butter melts add yeast and stir till completely desolved.
  • 4. add water to dry mixture and mix thoroughly, you will have to a a tad of the reserved dill water here to make a good dough.
  • 5. Wrap bowl with plastic wrap and set in warm place to rise twice it's size. About 1 1/2 hours. Once risen, roll onto floured surface and knead 20-30 times, shape and place in greased bread pan,rub top of loaf with shortening, cover with dry towel and let rise again till doubled in size, about an hour!
  • 6. Place in 350* oven for 20-30 minutes until done. Cool on wire rack for 15-20 minutes before slicing. This bread turned out amazing!

3 Tbsp butter (softened)
1 Tbsp dill seed
1 Tbsp sesame seeds
2 1/2 tsp active dry yeast
2 tsp salt
2 Tbsp dry milk
1/4 c sugar
3 c bread flour
1 c rye flour

Savory Zucchini Garlic Onion Dill Bread image

Steps:

  • 1. Preheat oven to 350 degrees. Spray or butter 3 mini loaf pans (3 1/2 x 6) or 1 standard loaf pan.
  • 2. Mix all dry ingredients together in a large bowl and whisk. (Can sift if you would prefer.) Using a large spoon to this bowl, add zucchini, cheese, onion and dill, coating completely.
  • 3. Add wet ingredients (eggs, milk w/vinegar, and melted butter).
  • 4. Stir until just blended. Place equally in to prepared pans.
  • 5. Bake 3 mini loaves for 20 minutes. Remove from oven and brush with 1/2 of butter garlic powder mixture. Return to oven approximately 5 more minutes or until a toothpick comes out almost clean and they are golden brown. When done, brush with remaining butter mixture.
  • 6. (For a standard size loaf, bake approximately 45 minutes, brush with butter and return for an additional 5 minutes.) I have never used a large pan myself, so watch closely.

3 c flour
4 tsp baking powder
1 tsp salt
1/2 tsp baking soda
2 tsp garlic powder
1 c shredded zucchini, peel left on
3/4 c shredded cheddar
1/2 medium onion, chopped finely
2 tsp dried dill weed
2 large eggs, beaten
1 Tbsp white vinegar mixed with enough milk to make 1 cup
4 Tbsp butter, melted
USE TO BRUSH ON LOAVES:
4 Tbsp additional melted butter
1/8 tsp garlic powder
1 pinch of dill weed

Steps:

  • In a large bowl, dissolve yeast in warm water. In a small saucepan, heat cottage cheese to 110°-115°; add to yeast mixture. Add fresh dill, butter, salt, sugar, dill seed, egg and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into a 6-in. circle. Transfer to a greased 9-in. round baking pan. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 350°., Bake until golden brown and bread sounds hollow when tapped, 35-40 minutes. Remove from pan to a wire rack to cool. Cut into wedges.

Cindy's Cottage Cheese Dill Rolls image

Steps:

  • 1. In the 2 cups of water & butter and place this in the microwave for 2 minutes
  • 2. In Bread machine add the water mixture, then flour milk, salt, yeast in that order. Put bread machine on dough cycle.
  • 3. In the meantime saute onions in a tbsp of butter till browned and tender. Set aside to cool.
  • 4. Combine the filing ingredients and place in refrigerator.
  • 5. When dough is done, spray your counter top with non stick spray and roll out to 1/2 inch thick to an oblong shape. Put the filing down the middle without touching the sides. From one end roll up. Secure edges. Cut into 12 rolls. Place in a sprayed muffin pan and let rise to double.
  • 6. Heat oven to 400F and bake for 20 minutes. When removed from oven brush melted butter on top of each one. Serve warm.
