SAVORY ITALIAN SAUSAGE SAUCE
This is a great homemade sauce. It's savory and spicy, as well as thick and chunky. The secret is the combination of Italian sausage, green onions, red wine and red pepper flakes. Easily double or triple amount and top on anything! Even better the next day. Enjoy.

Steps:
- Heat olive oil in a large skillet over medium-high heat. Saute garlic until browned. Add sausage and cook for 4 minutes, breaking apart with a spoon. Add green onions and cook until sausage is evenly browned, about 10 minutes.
- Stir in mushrooms, basil and oregano; cook for 5 minutes. Stir in tomato sauce, stewed tomatoes, and tomato paste. Add water, red wine, red pepper flakes, and sugar. Season with salt and pepper to taste. Reduce heat to low and simmer for at least 1 hour.

- Place sausage on a hot grill and cook until done. This may take about 45 minutes.
- Heat oil in a saute pan placed on grill. Add red onions, garlic, red bell peppers, and green bell peppers and cook until translucent. Add basil and scallions and cook for a few minutes. Once cooked, cut sausage into 2-inch long pieces, and arrange on serving platter with pepper and onion mixture. Serve with crusty bread or rolls.

- Prepare tortellini according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in pasta sauce; heat through., Drain tortellini, reserving 1 cup cooking water. Add tortellini to sauce and enough reserved cooking water to reach desired consistency; toss to coat. Stir in Parmesan cheese; dollop with mascarpone cheese. If desired, sprinkle with red pepper flakes.

- In a large saucepan, cook sausage and onion over medium heat until meat is no longer pink and onion is tender. Drain. Add garlic; cook 1 minute longer. , Stir in the broth, tomatoes, tomato sauce, carrot, basil and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Gently stir in the tortellini, zucchini, green pepper and parsley. Cover and simmer for 20-25 minutes or until tortellini is tender. - Place a large Dutch oven or heavy bottom saucepan over medium-low heat. Render some fat from the ground beef and sausage, allowing a thin layer to form on the bottom of the pan while using a spatula to break the meat into small pieces, 1-2 minutes. Turn the heat up to medium and brown the meat until it’s no longer pink, 3-5 minutes. Drain through a colander and discard the fat. Set the meat aside.
- Wipe down the pot briefly to remove any excess fat, but don’t clean it. Heat the olive oil over medium heat, then add the onion along with a pinch of salt. Cook for 3-5 minutes, stirring, until soft. Add the garlic and cook for an additional minute while stirring.
- Return the meat to the pan. Add the tomato paste, crushed and diced tomatoes, basil, oregano, and brown sugar, stirring to combine. Bring to a simmer, then reduce the heat to low and cover, leaving the lid slightly ajar to let steam escape. Simmer, stirring occasionally, for 60-90 minutes (longer will give the flavors more time to mingle, but 60 minutes will do the trick).
- Stir in the salt, pepper, and crushed red pepper flakes if using. Taste and adjust seasonings if desired.
