TUNA (OR CHICKEN) MACARONI SUPPER SALAD

This is great in the summertime, when the last thing you want for dinner is something hot. (Preparation time given does not include chilling time.)

Tuna (Or Chicken) Macaroni Supper Salad image

Steps:

  • Cook elbow macaroni as package directs. Drain; rinse with cold water.
  • In large bowl, combine mayonnaise, Italian dressing, and mustard; mix well.
  • Add cucumber, tomato, green pepper, green onion, salt, pepper, tuna (in large pieces) and macaroni; toss to mix well.
  • Refrigerate, covered, until well chilled - about 4 hours.
  • Serve over a bed of mixed green garnished with chopped egg and parsley.

1 (8 ounce) package elbow macaroni
1 cup mayonnaise
1/2 cup Italian salad dressing
1 tablespoon Dijon mustard
2 cups pared thinly sliced cucumbers
1 1/2 cups diced tomatoes
1/2 cup diced green pepper
1/4 cup coarsely chopped green onion
1 teaspoon salt
1/4 teaspoon pepper
2 (7 ounce) cans solid white tuna, drained or 2 cups diced cooked chicken
1 hard-cooked egg, chopped
chopped parsley

TUNA & MACARONI SUMMER SALAD

With the warm summer months approaching; many of us will think about outdoor barbeques and get togethers. You certainly need something to go with those hotdogs and burgers. Macaroni salad is a popular side when serving hamburgers and hotdogs. I have taken the traditional macaroni salad recipe and I added a few new spices and ingredients so that you could even make a meal out of the macaroni itself.

Tuna & Macaroni Summer Salad image

Steps:

  • In large pot bring between 5-6 cups of water to boil and add your elbow macaroni. You need to cook according to directions on the back of the macaroni box, usually 8-10 minutes.
  • Drain all excess water from macaroni and allow macaroni to sit while it cools for about 20 minutes. In large mixing bowl combine mayonnaise, diced onion, carrots, peppers, horseradish, garlic powder, salt, pepper and mix throughly.
  • Next, add tuna fish and mix throughly followed by the Romano cheese. Not only will your tuna macaroni taste great it is very colorful also.
  • Finally, place your salad in an attractive serving bowl and add your parsley and paprika on top as a final garnish. Remember, presentation is important!

My dad "Bear" used to make this when I was little. I remember he used to put peas in it ( god how I hated those ) I have since taken them out of the recipe but feel free to add them in if you so choose.

Dad's Tuna Macaroni Salad image

Steps:

  • 1. All measurements in this recipe are approximate we really never measured anything just did it to our liking.
  • 2. Cook macaroni noodles to al dente, drain and rinse with cold water to stop cooking process.
  • 3. Once pasta is cool open and drain tuna and place in a large mixing bowl with pasta.
  • 4. Add mayonnaise until salad is creamy.
  • 5. Add olives and mix salad well. Once salad is mixed well season with celery salt to desired flavor is achieved.

1 box 16 oz elbow macaroni
2-3 can(s) tuna in water
2 c mayonnaise( do not use miricle whip)
1 jar(s) pimento stuffed green olives (sliced or salad style)
celery salt (to tastes)
