SAVORY STUFFED RAMBUTAN

Found some rambutans at a local Asian Market -Trans- and picked some up. Needed some recipes and this one was found on line.

Savory Stuffed Rambutan image

Steps:

  • Fry crushed garlic and coriander roots in oil. When garlic is golden, add all other ingredients except the fruit (rambutans). Cook and stir until the mixture is browned and fairly dry. Add fruit and cook, mixing well, for 2 minutes.
  • Serve as an entree, hors-d'oeuvre, or as a main course with rice.

2 garlic cloves
10 ml crushed coriander roots
vegetable oil (for frying)
125 g ground pork
50 ml coarse ground roasted peanuts
20 ml soy sauce
60 ml brown sugar
black pepper
1 chopped de-seeded chili pepper
30 ml fresh coriander leaves or 30 ml fresh parsley
500 ml peeled and de-seeded rambutans

MIRACLE ON 34TH CHICKEN SALAD

I had some left-over rotisserie chicken, some grapes, and some walnuts, but no Mayonnaise. My wife is a fan of Miracle Whip, me not so much, but we had that and some cool whip on the shelf. After looking at a few other Chicken Salad recipes I thought I would give it a try. Turned out so good, we had to get another Rotisserie chicken to make some more! (For me this works best and is easiest and cheapest with Rotisserie Chicken. Step 1. Buy Rotisserie Chicken, Step 2. Remove Skin, then meat. Step 3. Use about a third of the meat for this recipe and use the rest in other stuff. Enjoy!!!

Miracle on 34th Chicken Salad image

Steps:

  • With a whisk, lightly whip together Miracle Whip, Cool Whip, and Salt in a medium sized bowl.
  • Add Finely Diced Chicken Meat, and stir in with a wooden or plastic spoon.
  • Add Walnuts and Grape, and stir inches.
  • Eat or Refrigerate for a week or so.
