SCALLOPS WITH BACON AND YEAST SAUCE

Scallops with Bacon and Yeast Sauce image

Steps:

  • For the sauce: Heat 1/2 pound (2 sticks) of the butter in a saucepan until the milk solids turn a light brown. Add the yeast. Cook until yeast is caramelized and the same color as the butter. Add tamari and grape juice or red wine, then pour contents into a blender and blend until smooth. Pour back into pot and add remaining 1 stick butter. Whisk until emulsified. Reduce until saucy consistency.
  • For the cauliflower puree: In a Dutch oven or table-top fryer, preheat canola oil to 350 degrees F. Remove leaves and stem from cauliflower. Quarter the head of cauliflower. Fry until brown. Transfer to a blender in batches and blend until completely smooth. Season with salt.
  • For the scallops: Push 3 pieces of frozen matchstick bacon into each raw scallop through the top.
  • Add the canola oil to a medium saute pan over high heat. Once hot, sear scallops on one side until caramelized, 2 minutes; flip and cook the second side until caramelized, 2 mintues. Remove from heat.
  • For the garnish: In a small saute pan over a low flame, add the bacon lardons and 1 teaspoon olive oil and cook until the bacon renders its fat and becomes crispy, about 10 minutes.
  • Place frisee in a mixing bowl and dress lightly with sherry vinegar, 1 teaspoon olive oil and about 1 teaspoon of warm bacon fat.
  • To serve: Spread cauliflower puree on a serving platter. Slice scallops in half widthwise, then arrange over the cauliflower puree, garnish with the dressed frisee, spoon yeast sauce over the top and finish with some crispy bacon lardons.

Seared Scallops with Lemon and Bacon image

Steps:

  • Heat a large skillet over medium heat and fry the bacon pieces until golden and crisp, about 5 minutes. Reserve the bacon fat in the skillet and transfer the bacon with a slotted spoon to a paper towel-lined plate to drain.
  • Meanwhile, arrange the scallops so they lay flat and are evenly spaced on a plate. Pat them completely dry with a paper towel. Season the scallops with salt and pepper.
  • Cook the scallops, undisturbed, over high heat until they are golden brown on the bottom, about 3 minutes. Flip the scallops and cook for 1 minute more. Turn off the heat, add the lemon zest and juice, parsley and reserved bacon pieces and toss to combine. Divide the scallops among 4 plates or a serving platter and serve immediately.

Marinated Scallops Wrapped in Bacon image

Steps:

  • Stir together maple syrup, soy sauce, and Dijon mustard in a bowl until smooth. Add the scallops, and toss to coat. Cover bowl with plastic wrap, and marinate at least one hour.
  • Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with a sheet of aluminum foil.
  • Arrange bacon pieces on baking sheet so they do not overlap. Bake in preheated oven until some of the grease has rendered out of the bacon; the bacon should still be very soft and pliable, about 8 minutes. Remove bacon from the baking sheet and pat with paper towels to remove excess grease. Drain or wipe grease from the baking sheet.
  • Wrap each scallop piece with a piece of bacon, and secure with a toothpick. Place onto baking sheet. Sprinkle the scallops with brown sugar.
  • Bake in preheated oven until the scallops are opaque and the bacon is crisp, 10 to 15 minutes, turning once.

Steps:

  • Preheat oven to 425 degrees.
  • If you prefer, the bacon can be pre-cooked for a couple of minutes in the microwave to insure it will be crispy by the time the scallops are done.
  • Do not overcook the scallops as they will be rubbery.
  • Cut each piece of bacon in half to make 24 pieces.
  • Roll a piece of bacon around each scallop and secure on wooden skewers.
  • Place scallops on a rimmed baking sheet.
  • Sprinkle with Old Bay and creole seasoning.
  • Both seasonings contain salt, so don't overdo it!
  • Amounts listed are what I used.
  • Bake at 425 degrees for 15-18 minutes, or until the scallops are done.
  • The bacon should be crispy.
  • While the scallops are cooking, combine the ketchup, brown sugar and vinegar in a saucepan to make the dipping sauce.
  • Mix well and cook until the sugar is dissolved.
  • Serve the scallops with the dipping sauce.

Steps:

  • Cut bacon strips in half.
  • Wrap a piece of bacon around each scallop; secure with toothpick.
  • Arrange the wrapped scallops on a baking sheet.
  • Broil 5 inches from heat for 3 minutes per side, or until bacon is crisp.
  • In small skillet, melt butter; add garlic and saute 1 minute,.
  • Add broth and bring to a boil.
  • Cook 2 minutes.
  • Place scallops in large bowl; pour broth over, Gently toss to coat.

Seared Scallops with Bacon image

Steps:

  • Heat a large saute pan over medium-low heat, and add bacon. Cook slowly, stirring frequently, until brown and crisp, about 8 minutes. Remove bacon with a slotted spoon, and transfer to a paper-towel-lined plate.
  • Drain excess fat, leaving a thin coat on bottom of pan. Increase heat to medium, add scallops to pan, and sprinkle with salt and pepper to taste. Cook until golden brown and opaque, about 2 minutes per side.
  • Transfer scallops to the serving dish, and add shallots to pan. When shallots are translucent, add white wine; scrape browned bits from bottom of pan with a wooden spoon. Cook until liquid is reduced by half, 3 to 4 minutes. Stir in butter, and pour over scallops; top with reserved bacon. Serve over ribbon zucchini.

  • Crisp bacon in frying pan, under broiler or in microwave, whichever you prefer. Work on the dip while bacon cooks. When bacon is crisp, drain and chop. Set aside.
  • Preheat a nonstick pan over high heat for scallops.
  • Season scallops with salt and pepper. To very hot skillet, add 1 tablespoon oil, 1 turn of the pan, then place 9 scallops in the pan, an inch apart. Sear scallops 2 minutes on each side or until caramelized and opaque. Transfer to a platter and cover loosely with foil. Repeat with remaining scallops.
  • To serve, top scallops with chopped bacon bits and scallions by scattering them evenly over the plattered scallops. Place party picks in a shot glass or small dish and set them on/near platter. Place the crab dip on a large serving platter or board and surround with asparagus spears and sliced baguette, for dipping and spreading.

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
  • Preheat a grill to medium-high heat.
  • Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.
  • When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

Steps:

  • Stir together brown sugar, curry powder, and cayenne in a bowl until combined well.
  • Cook bacon in 2 batches in a 12-inch heavy skillet over moderate heat until some fat has rendered and edges begin to brown but bacon is still flexible, about 2 minutes per batch. Transfer bacon to paper towels to drain and cool.
  • Preheat broiler and lightly oil top rack of a broiler pan (do not line with foil).
  • Cut bacon slices in half crosswise. Divide sugar mixture among slices, spreading evenly and lightly pressing to help it adhere. Place 1 scallop half, cut side down, on each slice of sugar-coated bacon, then wrap bacon around scallop and secure with a toothpick. Transfer to oiled rack of a broiler pan.

  • In a small saucepan, bring broth to a boil. Add quinoa, salt and 1/8 teaspoon pepper.
